This Vegan Sausage Dish Is So Hearty

  • 4 vegan sausages
  • 1 cup quinoa
  • 2 cups of vegetable broth
  • 1 tin of chickpeas
  • 1 bell pepper
  • 1 zucchini
  • 1 cup of cherry tomatoes
  • 1 red onion
  • 5 cloves of garlic
  • 2 tablespoons tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • Salt
  • Black pepper
  • Fresh parsley, chopped (for garnish)


  1. In a large skillet, heat a bit of olive oil over medium heat. Add vegan sausages and cook until browned on all sides. Remove from the skillet and set aside. In the same skillet, add chopped red onion and sauté until softened. Add minced garlic and cook for an additional minute. Stir in the diced bell pepper, zucchini, and cherry tomatoes. Cook until the vegetables start to soften.
  2. Add the quinoa to the skillet and toast it for a couple of minutes, stirring frequently. Pour in the vegetable broth, tomato paste, smoked paprika, dried thyme, salt, and pepper. Mix well to combine.
  3. Return the browned vegan sausages to the skillet. Add chickpeas, cover the skillet, and let the mixture simmer until the quinoa is cooked and the sausages are heated through (about 15-20 minutes).
  4. Taste and adjust the seasonings as required. Once the quinoa is cooked, remove the skillet from heat. Serve the hearty vegan sausage dish in bowls, garnished with freshly chopped parsley. Enjoy!
