- 4 cloves garlic
- 2 tins of whole peeled tomatoes
- 4 cups of vegetable broth
- 1/4 cup of tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt
- Black pepper
- 1/4 cup of heavy cream
- Fresh basil, chopped
- Grated Parmesan cheese
- Croutons (optional)
Instructions:
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened. Add minced garlic and cook for an additional minute until fragrant.
- Pour in whole peeled tomatoes, vegetable broth, and tomato paste. Stir to combine. Add dried basil, dried oregano, dried thyme, bay leaf, salt, and black pepper. Mix well.
- Bring the soup to a boil, then reduce heat and let it simmer for 20-30 minutes to allow the flavors to meld. Remove the bay leaf from the soup.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth. If desired, stir in heavy cream for added creaminess. Adjust seasoning if necessary.
- Serve the comforting tomato soup hot, garnished with chopped fresh basil, grated Parmesan cheese, and croutons if desired.
