Make A Comforting Tomato Soup This Winter

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion
  • 4 cloves garlic
  • 2 tins of whole peeled tomatoes
  • 4 cups of vegetable broth
  • 1/4 cup of tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt
  • Black pepper
  • 1/4 cup of heavy cream
  • Fresh basil, chopped
  • Grated Parmesan cheese
  • Croutons (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened. Add minced garlic and cook for an additional minute until fragrant.
  2. Pour in whole peeled tomatoes, vegetable broth, and tomato paste. Stir to combine. Add dried basil, dried oregano, dried thyme, bay leaf, salt, and black pepper. Mix well.
  3. Bring the soup to a boil, then reduce heat and let it simmer for 20-30 minutes to allow the flavors to meld. Remove the bay leaf from the soup.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth. If desired, stir in heavy cream for added creaminess. Adjust seasoning if necessary.
  5. Serve the comforting tomato soup hot, garnished with chopped fresh basil, grated Parmesan cheese, and croutons if desired.
