Pico de gallo is a version that uses a few simple but powerful ingredients to create a zingy, tasty dip that complements so many other flavors. Here is an easy recipe, plus some ideas for uses. 

Ingredients:

  • 10 medium tomatoes
  • 2 red onions 
  • 2 cloves garlic
  • ¼ – ½ cup of jalapeño peppers
  • Juice of 1 lime
  • ½ cup fresh cilantro
  • 1 tablespoon extra virgin olive oil (optional)
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the onions and garlic and add to a bowl.
  2. Chop the tomatoes. Remove the stalks before adding them to the bowl.
  3. If the jalapeños aren’t chopped already then chop them up.

Create a culinary masterpiece with these homemade Stilton ravioli, filled with rich and creamy cheese. They can be a bit tricky to make but they more than make up for it with their deep umami flavor and tanginess. Here’s a recipe for how to make them.

Ingredients:

  • 2 cups of all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • Water
  • 1 cup of crumbled Stilton cheese
  • 1/4 cup of ricotta cheese
  • 1/4 cup of grated Parmesan cheese
  • Salt
  • Black pepper
  • 3 tablespoons unsalted butter
  • 1 cup of heavy cream
  • Fresh chives, chopped (optional, for garnish)
  • Toasted walnuts, chopped (optional, for garnish)

Instructions:

  1. On a clean surface, mound the flour and create a well in the center. Crack the eggs into the well, add salt, and gradually incorporate the flour into the eggs.
  2. Knead the dough until smooth, adding water if necessary. Wrap in plastic and let it rest for 30 minutes. In a bowl, mix crumbled Stilton cheese, ricotta, grated Parmesan, salt, and black pepper until well combined. Set aside. Divide the rested dough into smaller portions.   • bunch of fresh parsley for garnish
  • pomegranite seeds for garnish
  • TBSP of mayo
  • Jerusalem Spice Blend
  • 1/2 tsps of sumac
  • 1/2 tsps of smoked paprika

Instructions:

  • Preheat your oven on the roasting setting to 425 degrees
  • Bring a large pot of water to a rapid boil and put your caulifower in the water until it is fork tender
  • Take the caulfower out and let it cool and dry, then mix it with the mayo and spices
  • Line a cookie sheet with parchment paper and greece it with a cooking oil of choice
  • Place the Caulifower in the oven to roast for 30 minutes to an hour or until it is crispy and cooked through

One of the spreads we can’t get enough of lately is tapenade. This popular French spread, made with olives, capers, and anchovies, is not only delicious but also doesn’t require you to go to the grocery store, as you can make it at home. Here’s how.

Ingredients:

  • ½ cup pitted black olives
  • ¼ cup pitted green olives
  • 1 anchovy fillet
  • 2 tablespoons capers
  • 4 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 3 cloves garlic

Instructions:

  1. Rinse the black olives and green olives under cold water and drain. Put in a blender.
  2. Add the remaining ingredients and blend until you get a smooth paste-like consistency.
  3. Stop the blender from time to time in order to scrape the ingredients that were stuck on the side.

Tomato salsa is a hugely popular dish. It can be used in so many ways and adds so much flavor and freshness. Pico de gallo is a version that uses a few simple but powerful ingredients to create a zingy, tasty dip that complements so many other flavors. Here is an easy recipe, plus some ideas for uses. 

Ingredients:

  • 10 medium tomatoes
  • 2 red onions 
  • 2 cloves garlic
  • ¼ – ½ cup of jalapeño peppers
  • Juice of 1 lime
  • ½ cup fresh cilantro
  • 1 tablespoon extra virgin olive oil (optional)
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the onions and garlic and add to a bowl.
  2. Chop the tomatoes. Remove the stalks before adding them to the bowl.
  3. If the jalapeños aren’t chopped already then chop them up.
  4. Add the lime juice and extra virgin olive oil if using and then season with salt and pepper.
  5. Tear the cilantro leaves into the bowl and mix it all through.

Add to Burritos

There’s nothing better than a hearty, tasty burrito with some super fresh salsa added to the mix. Whether you enjoy a big cheesy, chicken burrito or a satisfying vegan bean one, this salsa will be a great addition.

As a Dip

Simply use to dip some crunchy tortilla chips and veg sticks into, along with some soured cream and guac.

Create a culinary masterpiece with these homemade Stilton ravioli, filled with rich and creamy cheese. They can be a bit tricky to make but they more than make up for it with their deep umami flavor and tanginess. Here’s a recipe for how to make them.

Ingredients:

  • 2 cups of all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • Water
  • 1 cup of crumbled Stilton cheese
  • 1/4 cup of ricotta cheese
  • 1/4 cup of grated Parmesan cheese
  • Salt
  • Black pepper
  • 3 tablespoons unsalted butter
  • 1 cup of heavy cream
  • Fresh chives, chopped (optional, for garnish)
  • Toasted walnuts, chopped (optional, for garnish)

Instructions:

  1. On a clean surface, mound the flour and create a well in the center. Crack the eggs into the well, add salt, and gradually incorporate the flour into the eggs.
  2. Knead the dough until smooth, adding water if necessary. Wrap in plastic and let it rest for 30 minutes. In a bowl, mix crumbled Stilton cheese, ricotta, grated Parmesan, salt, and black pepper until well combined. Set aside. Divide the rested dough into smaller portions. Roll out each portion into a thin sheet using a pasta machine or rolling pin.
  3. Place small amounts of the Stilton filling on one sheet of pasta, leaving space between each mound. Brush water around each mound of filling and place another sheet of pasta on top.
  4. Press down around each mound to seal, making sure to eliminate any air pockets. Use a ravioli cutter or a sharp knife to cut out individual ravioli.
  5. In a large skillet, melt unsalted butter over medium heat. Pour in the heavy cream and bring it to a gentle simmer. Season the sauce with salt and black pepper to taste.
  6. In a large pot of salted boiling water, cook the homemade Stilton ravioli for 3-4 minutes or until they float to the surface. Gently transfer the cooked ravioli to the creamy sauce, tossing to coat each piece. Cook for an additional 2-3 minutes or until the ravioli are heated through.
  7. If desired, garnish with chopped fresh chives and toasted walnuts for added texture and flavor.

Simple, delicious, and satisfying, this recipe requires only minimal prep and can be whipped up with just a few ingredients. Keep reading and enjoy this festive dish as a side to any meal.

Ingredients:

  • One head of cauliflower
  • homemade or store bought tahini
  • bunch of fresh parsley for garnish
  • pomegranite seeds for garnish
  • TBSP of mayo
  • Jerusalem Spice Blend
  • 1/2 tsps of sumac
  • 1/2 tsps of smoked paprika

Instructions:

  • Preheat your oven on the roasting setting to 425 degrees
  • Bring a large pot of water to a rapid boil and put your caulifower in the water until it is fork tender
  • Take the caulfower out and let it cool and dry, then mix it with the mayo and spices
  • Line a cookie sheet with parchment paper and greece it with a cooking oil of choice
  • Place the Caulifower in the oven to roast for 30 minutes to an hour or until it is crispy and cooked through
  • Arrange on a bed of tahini and drizzle a bit more on top of the cauliflower. Garnish with the pomegranate seeds, and parsley, sumac, and paprika!

Everyone loves a good spread. They are great for snacking when paired with toast or a slice of sourdough bread, but can also work well as ingredients in other dishes.

One of the spreads we can’t get enough of lately is tapenade. This popular French spread, made with olives, capers, and anchovies, is not only delicious but also doesn’t require you to go to the grocery store, as you can make it at home. Here’s how.

Ingredients:

  • ½ cup pitted black olives
  • ¼ cup pitted green olives
  • 1 anchovy fillet
  • 2 tablespoons capers
  • 4 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 3 cloves garlic

Instructions:

  1. Rinse the black olives and green olives under cold water and drain. Put in a blender.
  2. Add the remaining ingredients and blend until you get a smooth paste-like consistency.
  3. Stop the blender from time to time in order to scrape the ingredients that were stuck on the side.
  4. Spread on bread, use it as a dip or add to pasta dishes.
  5. Place the remainder of the tapenade in a container with a lid and store it in the fridge. It will remain good for about two weeks.
