This Comforting Tray Bake is Healthy And Delicious

Quick, easy, healthy, delicious—aren’t the best dinners all of these things? Certainly, when you’re home after a long day during the working week, you often don’t have the energy to create a gourmet feast. So, check out this recipe for a super easy, tasty tray bake that can be on the table in around half an hour.

Butternut Squash And Chickpea Tray Bake

Ingredients (to serve 4):

  • 1 butternut squash
  • 1 tin of chickpeas
  • 2 red onions
  • 2 tablespoons of oil
  • 1 teaspoon each of salt and pepper
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of oregano
  • 1 vegetable stock cube
  • 1 tablespoon of butter
  • 1 block of mozzarella

Instructions:

  1. Heat the oven to 350 °F.
  2. Scrub the squash and peel off any bad bits of skin. Slice into chunks half an inch thick and place in an oven proof dish. Quarter the red onions and add them to the dish.
  3. Season with the salt, pepper, smoked paprika and oregano, then drizzle over the oil. Place in the oven.
  4. Heat the butter in a pan, and then add the chickpeas in their liquid and the stock cube. Cook for 10 minutes, until the chickpeas have softened and most of the liquid has evaporated.
  5. Cook the squash and onion for another 10 minutes, then add the chickpeas (and any remaining liquid) to the pan. Cook for a further 20 minutes.
  6. Slice the mozzarella into thin pieces.
  7. Once the tray bake is cooked, serve onto plates and layer the mozzarella over the top.
