Ingredients:
- 1/4 cup olive oil
- 1/2 white onion
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1 teaspoon Kosher salt
- 1 can tomatoes
- 2 garlic cloves
- 6 ounces fideo
- 6 cups chicken broth
- Crumbled queso fresco
- Cilantro
- Lime wedges
Instructions:
- Heat the olive oil in a large heavy pot. Add the fideo and 1/2 teaspoon salt and cook for 2 to 3 minutes until golden brown.
- Pour into a medium bowl and put the garlic, onion, and tomatoes in a large blender. Blend and transfer the mixture to a pot. Cook over medium heat for 10 minutes. Stir in the coriander and cumin along with another 1/2 teaspoon salt.
