Red Pepper Soup is The Delicious Veggie Soup Everyone Loves

Soups are a great choice for any season. If you enjoy vegetables, this red pepper soup will be a breath of fresh air in your kitchen. The recipe is so simple that even people who never cook will be able to prepare it. It will take you 25 minutes. It’s meant for 2 servings, so if you want more don’t hesitate to double up on the ingredients list.

Ingredients:

  • 1 clove minced garlic
  • 3 cups vegetable broth
  • 1 jar 12-oz roasted red peppers
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/4 cup red lentils
  • 1/2 medium onion diced
  • salt
  • pepper

Instructions:

  1. Get a pot and add the olive oil. Set the stove to medium and cook the onion. When it becomes translucent you can add the garlic. Continue cooking for 2 more minutes.
  2. Start chopping the red peppers. Mix them with the paprika, salt, pepper.
  3. Add this mixture to the onions and continue cooking for 2 minutes.
  4. Next, include the red lentils and vegetable broth. Wait for the red pepper soup to start boiling and lower the heat. Let it simmer for 15 to 20 minutes. If you notice that it’s too thick you can add more broth.
  5. When the lentils are soft, transfer the soup to a blender. Make it into a puree and serve it right away.

RED PEPPER & TOMATO SOUP 🌶🍅 feeling a nice warming bowl of goodness last night after a full day at yoga teacher training ❤ . . ❣ what you'll need: 400g cherry tomatoes, 3 red peppers, 2 tbsp red wine vinegar, a few sprigs of thyme, basil leaves, non-dairy cream cheese (dairy if you eat it), sunflower seeds, 75ml boiling water, 2 tbsp olive oil, black pepper, 2 tsp sweet chili powder. . ❣ preheat the oven to 200c. Halve the cherry tomatoes & roughly chop the peppers. Place onto a lined baking tray & drizzle with the olive oil. Nestle in a few sprigs of thyme. Season with black pepper & roast for 30 minutes. Meanwhile, lightly toast 2 tbsp sunflower seeds in an oil-free pan. Transfer to a blender along with 2 tbsp red wine vinegar, the boiling water (add more depending on preferred consistency), & 2 tsp chili powder. Transfer to 2 bowls & top with a tbsp of the cream cheese, a few leaves of basil, and the toasted sunflower seeds.
