Chicken Noodle Soup Recipe That Will Warm Your Body and Soul

There’s really nothing better you can eat when you’re feeling down, sick, or just generally need to get some comfort from your food than some hot chicken noodle soup. Today, we share one of the best recipes for it so you can make it and have it on your table in no time.

Ingredients:

  • 2 pounds bone-in chicken thighs
  • 4 carrots
  • 4 celery ribs
  • 1 onion
  • 1 garlic clove
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp canola oil
  • 10 cups chicken broths
  • 2 bay leaves
  • 1/4 tsp dried thyme
  • 1 tbsp fresh parsley
  • a tbsp lemon juice
  • 8 oz egg noodles

Instructions:

  1. Season the chicken with salt and pepper.
  2. Heat oil over medium to high heat in a stockpot, and when it’s hot, add pieces of chicken. Cook each for 3-4 minutes until golden brown. Save 2 tbsp of drippings and discard the rest.
  3. Chop the onion and cook it on the chicken drippings for around 5 minutes. Add chopped garlic and cook for another minute. Start adding broth and bring to boil. Return the chicken and let it cook.
  4. Chop celery and carrots and add to your soup. Add bay leaves and thyme. Reduce heat and let simmer for half an hour, until chicken is tender.
  5. Remove the chicken from the pot and leave on a plate to cool down. Now is the time to add noodles and let them cook for around 20 minutes.
  6. Your chicken should be cool enough to handle with hands. Remove meat from bones, discard the bones, and shred meat into small pieces. Return meat to the pot. Season with parsley, lemon juice, salt, and pepper. Take the bay leaves out.
