If you’re looking to cook yourself a homemade, healthy, and delicious vegan meal, then this ricotta recipe with pasta and vegetables couldn’t be easier and more satisfying.

Ingredients:

  • Pasta for 4
  • 1 zucchini
  • 1 bell pepper
  • 1 large red onion
  • 1 can sweet corn
  • 14-ounce block of firm tofu
  • Juice of 1 lemon
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 2 tablespoons nutritional yeast
  • Salt and pepper, to taste
  • 1 tablespoon basil
  • 1 teaspoon smoked paprika

Instructions:

  1. Prepare the vegan ricotta by adding the tofu, garlic, lemon juice, olive oil, nutritional yeast, and some salt and pepper to a food processor. Blend until smooth and put to one side.
  2. Meanwhile, prepare the rest of the meal.
  3. Cook the pasta according to package instructions.
  4. Finely slice the onion and chop the zucchini and bell pepper.
  5. Heat some oil in a large pan and add the onion. Gently fry for 5 minutes.
  6. Add the bell pepper to the pan and fry for a further 5 minutes.
  7. Add the zucchini, sweet corn, basil, paprika, and some salt and pepper, and fry for another 10 minutes.
  8. Drain the pasta and then mix with the vegetables. Divide into bowls and top with a dollop of the vegan ricotta ready to serve.

Baba ghanoush is a traditional Levantine dip made from smoky eggplant. It’s rich and creamy and is perfect for dipping pita bread and vegetable sticks into. This recipe is surprisingly easy to make and produces a creamy and satisfying dip which is an ideal starter. This recipe will serve 4-6, and can easily be doubled to make a larger quantity.

Ingredients:

  • 1 large eggplant
  • 3 cloves garlic, finely minced
  • 3 tablespoons lemon juice
  • ¼ cup tahini
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh parsley leaves, finely chopped
  • ½ teaspoon salt
  • ½ teaspoon dried cumin
  • ½ teaspoon dried coriander

Instructions:

  1. Preheat the oven to 360℉. Line a baking tray with greaseproof paper.
  2. Place the eggplant on the baking tray, drizzle with oil, and pop into the oven for 40-50 minutes, until the skin is entirely blackened. 
  3. Cut the eggplant in half and remove the skin. Squeeze and drain any excess liquid and then add the remaining eggplant to a large bowl. 
  4. Into the bowl pour the lemon juice, tahini, olive oil, garlic, salt, cumin, coriander, and half the parsley leaves. 
  5. Mix everything together, ensuring the eggplant breaks up. 
  6. Once well combined, transfer the mixture to a serving bowl. Drizzle with a little extra virgin olive oil, scatter over the remaining parsley leaves, and enjoy.

If you’re someone who loves a fresh green salad in summer, then this is something you’re likely to miss during winter when typical salad ingredients aren’t around. This winter salad is ideal for when you’re craving something fresh and crunchy during this season. It’s perfect as a side to any meal or could be mixed with rice or couscous and served as a main with some added protein of your choice. 

Ingredients:

(Serves 2)

  • ½ red cabbage 
  • 2 large carrots
  • 1 small red onion
  • 2 large sticks of celery
  • ½ cup peanuts or cashew nuts
  • ¼ cup cilantro
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the red cabbage into very thin strips and place in a large salad bowl
  2. Grate the carrots into a bowl
  3. Using your hands, squeeze the grated carrots over the bowl to remove excess liquid
  4. Add the carrots to the cabbage bowl
  5. Finely dice the celery and onion and add to the salad bowl
  6. Sprinkle over some sea salt and then add the balsamic vinegar
  7. Stir thoroughly and then set aside for 5 minutes
  8. Grate over some fresh black pepper and then add the extra virgin olive oil and mix well
  9. Add the nuts of your choice and tear the cilantro into the bowl
  10. Stir well and then serve

Stir fry is one of the best meals. Quick, tasty, and packed with veg, you can’t really go wrong. This exciting version pairs fresh green broccoli with succulent beef for a hearty and healthy meal. Ingredients:

(Serves 4)

  • 15 oz frying steak
  • 1 head of broccoli 
  • 1 large white onion
  • 3 cloves garlic
  • 1-inch piece of ginger
  • 1 red chili
  • 1 tablespoon oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • ½ cup cashew nuts

Instructions:

  1. Chop the broccoli, onion, garlic, ginger, and chili
  2. Chop the frying steak into smaller pieces
  3. In a large wok heat the oil
  4. Add the broccoli and onion
  5. Fry this for 10 minutes stirring frequently
  6. Add the beef and continue to stir fry for another 5 minutes
  7. Add the garlic, ginger, and chili and continue to stir fry for another 5 minutes 
  8. Add the cashew nuts and stir them through
  9. In a small bowl mix the oyster sauce and rice vinegar and then add to the wok, ensuring it is well mixed in
  10. Serve immediately with rice or noodles, and some cilantro scattered over

Veganism is more popular than ever, with so many opting for this diet for a range of ethical and health-related reasons. Even meat and dairy eaters sometimes opt for vegan meals from time to time, and the options available are increasingly more varied and exciting. If you’re looking to cook yourself a homemade, healthy, and delicious vegan meal, then this ricotta recipe with pasta and vegetables couldn’t be easier and more satisfying.

Ingredients:

  • Pasta for 4
  • 1 zucchini
  • 1 bell pepper
  • 1 large red onion
  • 1 can sweet corn
  • 14-ounce block of firm tofu
  • Juice of 1 lemon
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 2 tablespoons nutritional yeast
  • Salt and pepper, to taste
  • 1 tablespoon basil
  • 1 teaspoon smoked paprika

Instructions:

  1. Prepare the vegan ricotta by adding the tofu, garlic, lemon juice, olive oil, nutritional yeast, and some salt and pepper to a food processor. Blend until smooth and put to one side.
  2. Meanwhile, prepare the rest of the meal.
  3. Cook the pasta according to package instructions.
  4. Finely slice the onion and chop the zucchini and bell pepper.
  5. Heat some oil in a large pan and add the onion. Gently fry for 5 minutes.
  6. Add the bell pepper to the pan and fry for a further 5 minutes.
  7. Add the zucchini, sweet corn, basil, paprika, and some salt and pepper, and fry for another 10 minutes.
  8. Drain the pasta and then mix with the vegetables. Divide into bowls and top with a dollop of the vegan ricotta ready to serve.

Summer is a great time for food and drink. There are some lovely ingredients in season, and eating and cooking outside is one of life’s greatest joys. Of course, this means barbecues are perfect and a great way to host lots of people. Four Cheese Mac and Cheese

Mac and cheese is an incredible side to have at a barbeque, and making one with 4 cheeses is sure to blow people’s minds. Cook your pasta and in the meantime make a white sauce. Once both are ready, mix together and add some grated cheddar, some blue cheese, some mozzarella, and some parmesan. Pop in the oven for 30 minutes, until the top is nicely browned. 

Rainbow Slaw

With all the tasty, rich foods, it’s always a good idea to have something fresh and crunchy at a barbecue. Rainbow slaw is perfect, and so easy to make. Simply shred some white cabbage and white onion and grate some carrot and beetroot. Mix these together with some seasoning and a vinaigrette or some mayonnaise depending on your preference, and stir through some fresh parsley.

Baba ghanoush is a traditional Levantine dip made from smoky eggplant. It’s rich and creamy and is perfect for dipping pita bread and vegetable sticks into. This recipe is surprisingly easy to make and produces a creamy and satisfying dip which is an ideal starter. This recipe will serve 4-6, and can easily be doubled to make a larger quantity.

Ingredients:

  • 1 large eggplant
  • 3 cloves garlic, finely minced
  • 3 tablespoons lemon juice
  • ¼ cup tahini
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh parsley leaves, finely chopped
  • ½ teaspoon salt
  • ½ teaspoon dried cumin
  • ½ teaspoon dried coriander

Instructions:

  1. Preheat the oven to 360℉. Line a baking tray with greaseproof paper.
  2. Place the eggplant on the baking tray, drizzle with oil, and pop into the oven for 40-50 minutes, until the skin is entirely blackened. 
  3. Cut the eggplant in half and remove the skin. Squeeze and drain any excess liquid and then add the remaining eggplant to a large bowl. 
  4. Into the bowl pour the lemon juice, tahini, olive oil, garlic, salt, cumin, coriander, and half the parsley leaves. 
  5. Mix everything together, ensuring the eggplant breaks up. 
  6. Once well combined, transfer the mixture to a serving bowl. Drizzle with a little extra virgin olive oil, scatter over the remaining parsley leaves, and enjoy.

If you’re someone who loves a fresh green salad in summer, then this is something you’re likely to miss during winter when typical salad ingredients aren’t around. This winter salad is ideal for when you’re craving something fresh and crunchy during this season. It’s perfect as a side to any meal or could be mixed with rice or couscous and served as a main with some added protein of your choice. 

Ingredients:

(Serves 2)

  • ½ red cabbage 
  • 2 large carrots
  • 1 small red onion
  • 2 large sticks of celery
  • ½ cup peanuts or cashew nuts
  • ¼ cup cilantro
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper, to taste

Instructions:

  1. Finely slice the red cabbage into very thin strips and place in a large salad bowl
  2. Grate the carrots into a bowl
  3. Using your hands, squeeze the grated carrots over the bowl to remove excess liquid
  4. Add the carrots to the cabbage bowl
  5. Finely dice the celery and onion and add to the salad bowl
  6. Sprinkle over some sea salt and then add the balsamic vinegar
  7. Stir thoroughly and then set aside for 5 minutes
  8. Grate over some fresh black pepper and then add the extra virgin olive oil and mix well
  9. Add the nuts of your choice and tear the cilantro into the bowl
  10. Stir well and then serve

Scrambled Eggs

This super quick and easy meal is transformed when butter is entered into the equation. Instead of starting with oil, melt some butter in the pan in which you’ll be scrambling the eggs. Having the eggs cooked in this way produces some seriously creamy and smooth results. 

Steak

Steak is already very luxurious, so maybe you’re thinking there’s no need to add butter as well. But once you try the difference you won’t think twice in the future. You’ll want to start with a bit of oil in the pan for the steak to begin frying in, as the butter would likely burn at this stage. However, once the steak has been cooking for a few minutes and is starting to brown, this is when the butter should be added – just rub a small amount into the steak and let it melt into it.

Stir fry is one of the best meals. Quick, tasty, and packed with veg, you can’t really go wrong. This exciting version pairs fresh green broccoli with succulent beef for a hearty and healthy meal. You can adapt this recipe to suit your tastes too, by adding different vegetables or using different sauces. 

Ingredients:

(Serves 4)

  • 15 oz frying steak
  • 1 head of broccoli 
  • 1 large white onion
  • 3 cloves garlic
  • 1-inch piece of ginger
  • 1 red chili
  • 1 tablespoon oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • ½ cup cashew nuts

Instructions:

  1. Chop the broccoli, onion, garlic, ginger, and chili
  2. Chop the frying steak into smaller pieces
  3. In a large wok heat the oil
  4. Add the broccoli and onion
  5. Fry this for 10 minutes stirring frequently
  6. Add the beef and continue to stir fry for another 5 minutes
  7. Add the garlic, ginger, and chili and continue to stir fry for another 5 minutes 
  8. Add the cashew nuts and stir them through
  9. In a small bowl mix the oyster sauce and rice vinegar and then add to the wok, ensuring it is well mixed in
  10. Serve immediately with rice or noodles, and some cilantro scattered over
