This carrot cake recipe is easy to make and is the perfect sweet treat to please the whole family.
Ingredients:
- 2 cups plain flour
- 1 cup demerara sugar
- 2 carrots
- 3 eggs
- 3 tablespoons oil
- 1 tablespoon ground cinnamon
- 2 teaspoons ground nutmeg
For the Frosting:
- 3 ounces butter
- 6 ounces full-fat cream cheese
- ½ cup icing sugar
- Walnut halves for decoration
Instructions:
- Preheat oven to 350 ℉
- Line a cake tin with greaseproof baking paper
- Grate the carrots and place to one side
- In a large bowl, mix the flour, sugar, and oil until it reaches a smooth consistency
- Add the grated carrot, cinnamon, and nutmeg and mix well
- Add the eggs and beat them in
- Place this mixture into the cake tin and place in the oven for 30-40 minutes
- Meanwhile, make the cream cheese frosting
- Beat the butter and cream cheese together until smooth
- Add the icing sugar and beat again, until everything is thoroughly mixed
- When the time is up, check the cake is cooked by sticking a knife in the middle and seeing if it comes out clean
- When cooked, leave the cake to cool on a rack
- When completely cool, top with the frosting and then decorate with walnut halves
