A good soup usually starts off with a vegetable or chicken broth base, but when it comes to plant-based soups, it’s not all about the broths. The secret lies in the details, and with these tips—your vegan soups won’t taste bland ever again.

Salt

Salt adds a much-needed flavor when you cook with vegetables. Vegetable soups often use beans to give protein, and salt helps bring out the unique flavors in beans.

Water

Water makes the base of soups—and a key thing is to only add it once. Even if your soup is a bit thick, don’t add it again. Also, remember to season the soup with salt, pepper, and dried spices.

Texture
