It’s all about spaghetti sauce this morning!!!🍽I decided to try the ground elk and ground boar…🙈I love the elk, never tried the boar… 🤞🏼hoping its gonna be awesome!!! Meatballs and sauce Sauce:🍅 2 cans of Cento whole tomatoes (35ounce)or your favorite kind 2 can Cento crushed or puréed tomatoes(28ounce) or your favorite kind 2 Tbsp Cento tomato paste Bunch of chopped fresh basil🌿 4 minced cloves Scoop of Luo Han guo or tbsp sugar Tsp salt Combine all ingredients in a large pot. Add 4 cups water, stir well. Meatballs:🥣 Combine: 1lb ground elk 1lb ground boar 2 eggs 1 cup of fresh white bread crumbs. (Sliced bread into small cubes) 3 tbsp cream cheese softened 4 tbsp grated Parmigiano Reggiano 1/2 cup fresh chopped parsley 3 cloves minced Tsp Salt and tsp black pepper Combine all ingredients, mix together well. Take a good hand full of meat and roll into a ball, in-between a golf ball and tennis ball…In a skillet brown meatballs in olive oil, place meatballs in sauce. Bring sauce to boil, then turn down to simmer for 2 hours. Tomatoes are used as the base to so many dishes in Italian cooking. Although using fresh is always best, cooking with canned tomatoes is usually just as good. However, the kind you buy is very important. The best to get are whole peeled tomatoes, which have more flavor because the tomato is kept intact.
