If you ever cook with egg whites—for example, an egg-white omelette or a meringue—you may sometimes have yolks leftover and not know what to do with them. Luckily yolks are an essential ingredient in perhaps even more recipes than egg whites, so having leftover yolks is a blessing in disguise. Here are just a few ideas to get you started.

Pasta Carbonara

Egg yolk is one of the few ingredients in this classic Italian dish. It uses egg yolk and grated hard cheese to make a simple, creamy sauce for your pasta. Go all the way by salting your egg yolks to use as a garnish you can grate on top in addition to parmesan cheese.

Custard

Custard is used in many different desserts including creme brulee, creme anglaise for ice cream, and filled pastries. It uses multiple egg yolks to help create its unique creamy and thick quality that make it the perfect snack or dessert.

Hollandaise Sauce

This is the sauce traditionally poured on top of eggs Benedict specifically, but you can use it for other dishes like eggs Florentine or even pasta. It’s a great thing to make at home because it’s usually served warm and in copious quantities at a time.
