Ingredients:

  • 1 pound of potato gnocchi (store-bought or homemade)
  • 1 cup of all-purpose flour
  • 2 large eggs, beaten
  • 1 cup of breadcrumbs
  • 1 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Vegetable oil for frying
  • Fresh parsley, chopped (for garnish)
  • Marinara sauce (for dipping)

Instructions:

  1. In three separate shallow bowls, place the flour, beaten eggs, and a mixture of breadcrumbs, Parmesan cheese, salt, pepper, oregano, and garlic powder.
  2. Lightly dust the gnocchi with flour. Dip each piece in the beaten eggs, then coat with the breadcrumb mixture, pressing gently to ensure it sticks.
  3. In a deep frying pan or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
  4. Carefully place a few gnocchi into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
  5. Sprinkle the fried gnocchi with fresh parsley. Serve immediately with warm marinara sauce for dipping.
