Homemade pasta is really a delight, and with a stand mixer, it couldn’t be easier to make!
Ingredients:
- 1 1/2 cups of semolina flour
- 1 1/2 cups of all-purpose flour
- 4 room temperature eggs, slightly beaten
- 4 tablespoons of olive oil
- 4 tablespoons of water
- 1 teaspoon of salt
Instructions:
- If you have a stand mixer, put the semolina, all-purpose flour, beaten eggs, water, salt and oil into the bowl with the dough hook attached. If not, you can do this all by hand.
- Knead on medium speed until the dough forms a ball, which can take a few minutes so keep an eye on it.
- However, if your dough seems too sticky, add more semolina and for the opposite problem of being dry, add water.
- The dough is ready when you can put your finger into it and have it spring back instead of being sticky.
- Then, cover the dough for 30 minutes in a bowl, or just with cling film and allow it to rest.
- Roll out the dough on a lightly floured surface into a large sheet, and cut out whatever shapes you like best.
- Finally, boil some water, salt it well, and cook the pasta for 3-5 minutes and you’re set!
