Whether you’re a committed vegetarian, simply trying to cut down on meat or have some non-meat eaters coming around, it’s always a good idea to have some great vegetarian recipes up your sleeve. These burger recipes are fresh, juicy, delicious, and easy to make. You can even prep them ahead and keep them in the fridge for up to three days before cooking if you like.
Pumpkin Seed and Quinoa
Ingredients (to make 8 burgers):
- 1/2 cup of quinoa
- 2 onions
- 1 leek
- 4 cloves of garlic
- 1/2 cup of vegetable stock
- 2 tbsp tomato puree
- 2 tbsp oil
- 1/4 cup of pumpkin seeds
- 1 tsp smoked paprika
Instructions:
- In a large pan, fry the sliced onions and leek. Cook for 10 minutes, until softened.
- Add the sliced garlic cloves, the tomato puree, and the smoked paprika. Fry for another 10 minutes, then remove from the heat.
- In a saucepan, cook the quinoa until soft. Mix into the onions, add the stock and pumpkin seeds, and then cook until most of the liquid has steamed off.
- Allow the mix to cool, shape into patties, and fry on medium heat for 5 minutes on each side.
Halloumi and Squash
Ingredients:
- 1 block of halloumi
- 1 onion
- 1/2 cup of black beans
- 1 cup of cooked squash
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tablespoon of oil
Instructions:
- Cook the onion until it is softening, then add the smoked paprika, cayenne pepper, and the black beans. Cook for 10 minutes.
- In a separate pan, fry slices of the halloumi in just a little oil until they are beginning to brown on both sides.
- Mix the halloumi with the bean mix and the cooked squash. Mash well, if needed add a little water to loosen the mix.
- Shape into patties and fry in oil until golden brown on both sides.
Bean and Zucchini
Ingredients:
- 1 zucchini
- 1 cup of mixed beans
- 1/4 cup tomato puree
- 1 tablespoon of oil
- 1 tablespoon of mixed green herbs (such as basil, oregano, and thyme)
- 1 onion
Instructions:
- Fry the sliced onion in oil until it is softening
- Add the sliced zucchini, and cook for a further 10 minutes
- Add the mixed beans, tomato puree, and herbs, stir well
- Cook for a further 10 minutes
- Mash the beans into the mix
- Remove from the heat, allow to cool, then shape into patties. Fry for 5 minutes on each side
