Finding time to cook during the week can prove difficult between work and looking after the kids. Fortunately, there is a filling and scrumptious pasta recipe that takes less than an hour to prepare. Here is your guide to making a Spaghetti All’Assassina that will be perfect for weeknight dinners.
Ingredients:
- 8 ounces spaghetti
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- 1 tablespoon tomato paste
- 2 cups chicken broth
- 3 cups tomato puree
- 4 cloves garlic
- 5 tablespoons olive oil
Instructions:
- Heat a skillet of oil over medium heat. Add the garlic and red pepper flakes and cook for 2 to 3 minutes, until the garlic begins to soften. Add tomato paste and cook for 1 more minute.
- Pour the broth and the puree into a bowl. In the skillet, lay down the spaghetti and turn the heat to medium-high. Add 1 cup of broth and cook for 4 to 5 minutes, until there is a thickened paste around the spaghetti and at the bottom of the skillet.
- As the spaghetti begins to burn and stick to the skillet, use a spatula to lift it. Add another cup of broth and more salt to the pasta. Cook for another 25 to 30 minutes, until the pasta is al dente and the sauce is thickened.
