Cheesecakes are so delicious. We found a great recipe for a salted caramel cheesecake, so decided to share it with you below.
First of all, you will need separate ingredients for the cheesecake and the caramel topping.
For the cheesecake get:
3 large eggs
1/2 cup sugar
1/2 pound cream cheese
1/2 cup sour cream
To prepare the caramel you’ll need:
3 tablespoons unsalted butter
6 tablespoons light corn syrup
1/2 cup heavy cream
2 tablespoons sugar
fleur de sel
Set the oven to preheat on 325 F degrees. Start by beating the sugar and cream cheese until you get an even mixture. Add in the eggs one by one, and at the end the sour cream as well. Get six 5-ounce ramekins and fill them with the mixture.
Place all the ramekins in a pan and fill it with hot water. It should be halfway up the ramekins. Put it in a pan and in the oven. Leave the pan in the oven for 10 minutes. Once the time is up, turn it off, but leave the pan inside for an additional hour. You can now take it out of the oven.
Start preparing the caramel by heating the corn syrup. Add the sugar and wait for the mixture to get a caramel consistency. This should take around 9 minutes.
Take it off the stove and include the butter. Beat it well and add the cream. You can let it cool down. When it does, include 3/4 teaspoon of fleur de sel. Add the caramel on top of the cheesecakes in the ramekins. Let them in the fridge for three hours. The salty caramel cheesecake is now done!
