If you’re looking for a hearty and flavorful meal, this fish stew is the perfect choice. Combining fresh seafood with a medley of vegetables and spices, it’s both nutritious and delicious. Here’s how to make it.
Ingredients:
- 1 pound of white fish fillets (like cod or haddock), cut into chunks
- 1 pound of shellfish (shrimp, mussels, or clams), cleaned
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 can of diced tomatoes
- 4 cups of fish or vegetable broth
- 1 cup of dry white wine
- 2 teaspoons smoked paprika
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and cook until translucent, about 5 minutes. Stir in the garlic and red bell pepper, cooking for another 3 minutes.
- Pour in the diced tomatoes, broth, and white wine. Add the smoked paprika, thyme, and bay leaf. Season with salt and pepper. Bring the mixture to a simmer and let it cook for about 15 minutes to allow the flavors to meld.
- Add the fish chunks to the pot and simmer for 5 minutes. Then, add the shellfish and cook until they open and the fish is cooked through, about 5 more minutes. Discard any unopened shellfish.
- Ladle the stew into bowls, garnish with fresh parsley, and add salt and pepper to taste before serving hot with crusty bread. Enjoy!
