This Pasta Salad Recipe is Great For Potlucks!

Pasta salad truly is the quintessential side dish. This recipe is simple, packs well for picnics and potlucks, and is filled to the brim with zesty herbs and nutritious vegetables.

Ingredients: 

  • 1 pound cooked and cooled pasta – penne, bowties, and rotini work great!
  • 3 cups halved cherry tomatoes or roughly chopped Roma tomatoes
  • 1/3 cup thinly sliced red onion
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup chopped parsley
  • 1/4 cup chopped basil
  • 1/3 cup chopped fresh mint leaves
  • 1/2 cup feta cheese
  • 1/2 cup roughly chopped black olives
  • 1 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons dijon mustard
  • 1 1/2 tablespoons honey
  • 1 garlic clove, finely chopped into a paste
  • Salt and pepper

Instructions:

  1. Whisk the oil, vinegar, mustard, honey, garlic, salt and pepper in a large bowl.
  2. Add the rest of the pasta salad ingredients to the bowl.
  3. Mix well to coat the ingredients with the dressing.
  4. Serve immediately or keep in the refrigerator for 2-3 days. It’s actually even better to let the salad sit in the fridge for a few hours so it can soak up all of the flavors!
