Lamington cheesecake is literally perfection! Anyone obsessed with cheesecake has to try it.
Ingredients:
- 3 teaspoons water
- 1/2 cup caster sugar
- 250 g white chocolate
- 1/2 cup thickened cream
- 18 lamingtons
- 250 g mascarpone
- 300 ml thickened cream
- 250 g dark chocolate
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut
- 2 teaspoons gelatine powder
- 125 g cream cheese
Instructions:
- Prepare a 17×27 cm pan before you start making the lamington cheesecake.
- Place the lamingtons on the bottom of the pan.
- Grab a heatproof bowl and add the white chocolate with 150 ml cream. Start melting it in the microwave in short intervals.
- In a second bowl combine the water and gelatine. Place the bowl in the microwave for 20 seconds. Combine the gelatin with the melted chocolate.
- Beat together the sugar, mascarpone, cream cheese, vanilla. Combine it together with the chocolate mix.
- Get another bowl and beat the rest of the cream cheese to get soft peaks. Add it in the mix.
- Pour the mixture on top of the lamingtons. Leave the pan in the fridge for at least 8 hours.
- Next, melt the extra thickened cream with the dark chocolate. Leave the mix in the fridge for 20 minutes.
- Add it on top of the cheesecake and finish off with the shredded coconut.
