Flapjacks are the perfect sweet and healthy treat. Oats are a great source of fiber so make for a perfect breakfast. Using peanut butter gives an incredible flavor and provides some great protein. The bananas add some delicious caramel-like sweetness and also give you some healthy vitamins. This recipe makes 12 flapjacks.
Ingredients:
- 3 cups oats
- 1 cup smooth peanut butter
- 6 ripe bananas
- ½ cup brown sugar
- ¼ cup maple syrup
- ¼ cup salted butter
Instructions:
- Preheat the oven to 350℉.
- Place a pot on the stove over a low heat. Add the butter and the maple syrup to the pot and gently heat until melted.
- Pour in the oats and stir well. Add the sugar and mix throughout.
- Remove the pot from the heat and stir the peanut butter through.
- In a bowl, mash the bananas up until smooth.
- Stir the mashed bananas through the oat mixture.
- Line a baking tray with greaseproof paper. Transfer the mixture to the tray and spread out into an even layer.
- Place the tray in the oven for 15 minutes.
- Leave to cool on a wire rack for 10 minutes before slicing into squares and tucking in.
- Once cooled, these flapjacks can be placed in an airtight container and kept for up to 1 week.
