These Peanut Butter and Banana Flapjacks are Perfect for a Healthy and Tasty Breakfast

Flapjacks are the perfect sweet and healthy treat. Oats are a great source of fiber so make for a perfect breakfast. Using peanut butter gives an incredible flavor and provides some great protein. The bananas add some delicious caramel-like sweetness and also give you some healthy vitamins. This recipe makes 12 flapjacks. 

Ingredients:

  • 3 cups oats
  • 1 cup smooth peanut butter
  • 6 ripe bananas
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • ¼ cup salted butter

Instructions:

  1. Preheat the oven to 350℉.
  2. Place a pot on the stove over a low heat. Add the butter and the maple syrup to the pot and gently heat until melted. 
  3. Pour in the oats and stir well. Add the sugar and mix throughout. 
  4. Remove the pot from the heat and stir the peanut butter through. 
  5. In a bowl, mash the bananas up until smooth. 
  6. Stir the mashed bananas through the oat mixture. 
  7. Line a baking tray with greaseproof paper. Transfer the mixture to the tray and spread out into an even layer. 
  8. Place the tray in the oven for 15 minutes. 
  9. Leave to cool on a wire rack for 10 minutes before slicing into squares and tucking in.
  10. Once cooled, these flapjacks can be placed in an airtight container and kept for up to 1 week.
