Ingredients:
First Layer:
- 1 cup coconut
- 1 1/2 cup self-raising flour
- 1/2 cup brown sugar
- 2 tablespoons cocoa
- 125 g melted unsalted butter
Filling:
- 2 cups icing sugar
- 2 tablespoons milk
- 30 g vegetable shortening
- 1/2 teaspoons peppermint essence
Chocolate layer:
- 30 g unsalted butter
- 125 g dark chocolate.
Instructions:
- Set the oven to 345 F degrees.
- The pan should be 16 cm x 26 cm x 3 cm.
- First, mix the cocoa, flour, brown sugar, coconut, and melted butter. Stir the ingredients very well.
- When you’re done, press the mix on the bottom of the tray and bake it for 10 to 15 minutes.
- While you’re waiting you can prepare the filling. Mix the melted vegetable shortening, icing sugar, peppermint essence, and milk. When the base has cooled down a little, you can cover it with the filling. Leave it in the fridge for half an hour.
- Melt the chocolate and butter and pour the chocolate topping over the filling.
- Wait for the peppermint slices to be completely cold to serve them.
