Ingredients:
- 2 cups all-purpose flour
- 1/3 cup sugar, plus extra for sprinkling
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1 cup fresh blueberries
- Grated zest of 1 lemon
- 1 cup heavy cream
Instructions:
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the flour, 1/3 cup of sugar, baking powder, and salt.
- Add the chilled, cubed butter to the dry ingredients. Using a pastry blender or your fingertips, cut the butter into the mixture until it resembles coarse crumbs.
- Gently fold in the fresh blueberries and grated lemon zest.
- Pour in 1 cup of heavy cream and stir just until the dough comes together.
- Turn the dough out onto a lightly floured surface. Pat it into a round disc about 1 inch thick. Cut the dough into 8 wedges.
- Place the scones on the prepared baking sheet.
- Bake for 20-25 minutes, or until the scones are golden brown.
