There are many variations of vegan mac and cheese right now on the internet. Although all of them are good in their own ways, if you want to make one that actually tastes cheesy, creamy, and looks just like regular mac and cheese, this is the recipe for you. The best part is you can easily make it gluten-free with just two substitutions!

Ingredients

For this recipe, you need pasta, garlic, all-purpose flour, any type of vegan milk, and nutritional yeast. If you are making a gluten-free version of this recipe, just use gluten-free pasta and arrowroot powder instead of flour. For the spices, you can just stick to salt and pepper, or add in some paprika or even cayenne for a good kick.

Steps

  1. If you really like garlic, roast a whole head of garlic in the oven for 45-60 minutes. If you don’t care, you can skip this step.
  2. Boil the water to a boil, and while you are waiting, start frying up some garlic.
  3. Add the flour and whisk.
  4. Slowly add in the nut milk and continue whisking. It’s ok if the sauce is lumpy!
  5. Transfer to a blender with the roasted garlic, nutritional yeast, and spices.
  6. Heat again with the pasta and serve!
