There are many variations of vegan mac and cheese right now on the internet. Although all of them are good in their own ways, if you want to make one that actually tastes cheesy, creamy, and looks just like regular mac and cheese, this is the recipe for you. The best part is you can easily make it gluten-free with just two substitutions!

Vegan Mac&Cheese 😍 . Recipe (2 people): • Dice 2 potatoes, 1 carrot and 1 onion. • Boil the vegetables in water for 10min or until soft. • Finely grind 30g cashew nuts (alternatively, boil them together with the vegetables if you do not have a high-speed blender). • Blend the vegetables with a bit of their cooking water, the cashews, 1 tbsp nutritional yeast, 1 garlic clove, lemon juice, salt, cayenne pepper and paprika powder until creamy. • Add the sauce to cooked macaroni or similar pasta and toss to coat. • Top with more paprika powder, parsley and/or vegan parmesan, if you like, and enjoy! 🙃 . . . . . #vegan #vegetarian #veganpasta #veganmacandcheese #pastalover #foodblog #foodgram #veganfoodblog #veganfood #veganfoodlovers #veganfoodshare #whatveganseat #veganfortheanimals #veganfoodspot #bestofvegan #letscookvegan #feedfeed @thefeedfeed #veganworldshare #thevegansclub #deutschlandistvegan #germanygoesvegan #vegangermany #vegandeutschland #veganberlin #berlinvegan #sustainableliving #greenie #greenlife #gogreen💚

For this recipe, you need pasta, garlic, all-purpose flour, any type of vegan milk, and nutritional yeast. If you are making a gluten-free version of this recipe, just use gluten-free pasta and arrowroot powder instead of flour. For the spices, you can just stick to salt and pepper, or add in some paprika or even cayenne for a good kick.
Steps
If you really like garlic, roast a whole head of garlic in the oven for 45-60 minutes. If you don’t care, you can skip this step.
Boil the water to a boil, and while you are waiting, start frying up some garlic.
Add the flour and whisk.
Slowly add in the nut milk and continue whisking. It’s ok if the sauce is lumpy!
Transfer to a blender with the roasted garlic, nutritional yeast, and spices.
Heat again with the pasta and serve!
