The Perfect Peach Cobbler Recipe for Summer

Nothing says summer quite like the sweet aroma of peach cobbler wafting through the air on a warm evening. This beloved dessert, with its rich, bubbly peach filling and crumbly crust, is a true celebration of summer’s bounty. Let’s dive into this easy-to-follow recipe.

Ingredients:

For the Filling:

  • 8 fresh peaches, peeled, pitted, and sliced into thin wedges
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch

For the Topping:

  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • 1/4 cup boiling water

Instructions:

  1. Preheat your oven to 425° F.
  2. In a large bowl, combine the peach slices with white sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, then pour into a 2-quart baking dish. 
  3. In a separate bowl, mix the flour, white sugar, brown sugar, baking powder, and salt. Blend in the butter with your fingertips, or a pastry cutter, until the mixture resembles a coarse meal. Gradually stir in boiling water until just combined.
  4. Spoon the topping over the peaches in dollops. 
  5. Bake until the topping is golden brown and the peach filling is bubbling, 25-30 minutes.
