Ingredients:
- 6 tablespoons all-purpose flour
- 1 egg
- 3 tablespoons softened unsalted butter
- zest of half a lemon
- 1 teaspoon baking powder
- 1/3 medium apple (peeled and grated)
- a pinch of salt
- 5 1/2 tablespoons granulated sugar
- 1/3 cup ricotta
- powdered sugar
Instructions:
- Set the oven to 400 F degrees.
- For the lemon ricotta cake, you need a 6” pan. Get some butter and grease the pan so the cake doesn’t stick to it.
- Combine the sugar and butter in a bowl. Mix them together to get a creamy consistency.
- Then, include the egg. Mix them again.
- Add the baking powder, flour, and salt. Continue mixing to get an even texture.
- Pour the lemon zest, grated apple, and the ricotta in the bowl. Stir very well, and make sure to get rid of any clumps in the flour.
- Pour the batter in the pan and place it in the oven. Bake it for 25 minutes. You can check with a toothpick.
- Take out the cake and wait for 15 minutes before you serve it. Garnish it with powdered sugar.
