Baked yogurt is a way of serving yogurt that’s just that bit more special and indulgent. This recipe, packed with protein and mainly sweetened with fruit, is perfect at breakfast or at any time of day. You can adjust the flavorings to suit you and your family, and the baked yogurt will keep in the fridge for up to a week, so it’s a great one to make ahead.

Ingredients (to serve 4):

  • 1 1/2 cups of Greek yogurt
  • 4 eggs
  • 2 tablespoons of almond flour
  • 1 cup of mixed berries
  • 1/2 teaspoon of vanilla extract

Suggested Toppings: peanut butter, almond butter, maple syrup, honey, chocolate spread

Instructions:

  1. Preheat the oven to 350 degrees and grease and line an 8-inch x 8-inch baking tray.
  2. In a large bowl, whisk together the eggs, yogurt, almond flour and vanilla until the mix is pale and smooth.
  3. Pour into the baking tray and bake for 25 – 35 minutes (test it by shaking the tray, the center should be solid).
  4. Once cooled, slice into portions and let everyone top their own according to preference.

When the Dutch landed at the tip of Africa in the 17th century, they brought with them recipes that became forever ingrained in South African cuisine. Amongst them was milk tart which is a fan favorite at every local tea party. Milk tart—or melktert, as it is known in Dutch and Afrikaans—is reminiscent of a Portuguese custard tart, but with a sweet, cinnamon twist. Here’s how to make it.

Ingredients:

For the crust
• 125 grams butter, softened
• ½ cup of castor sugar
• 1 egg
• 2 cups of cake flour
• 1 teaspoon of baking powder

For the filling
• 2 ½ cups of milk
• 1 cinnamon stick
• 1 egg
• ½ cup of sugar
• 2 tablespoons of flour
• 2 tablespoons of cornstarch
• 1 teaspoon of vanilla paste
• 1 tablespoon of butter
• 1 teaspoon of ground cinnamon
• A pinch of salt

Instructions:

  1. Cream the softened butter and castor sugar together before adding the egg and beating it well to combine.
  2. Add in the cake flour, baking powder, and salt, and mix thoroughly to form a stiff dough.
  3. Press the dough evenly into a tart tin and prick holes using a fork.
  4. Blind bake the pastry at 350 F for 30 minutes or until golden and crispy.
  5. Place the milk and cinnamon stick into a pot and bring to a boil.
  6. Remove the cinnamon stick, and in a bowl whisk together the eggs, flour, sugar, cornstarch, and vanilla.
  7. Pour the hot milk into the egg mixture, whisking continuously. Then return the milk mixture to the pot and cook on medium heat until thickened. Stir through a spoonful of butter.
  8. Pour the milk mixture into the baked pastry shell and sprinkle over the ground cinnamon. Let the tart cool completely before serving.

Peel and chop up some apples and place them in a pan with water. Heat the pan on the stove and once the water is boiling, pour 340g of oats, two teaspoons of vanilla extract, and two tablespoons of cinnamon. Finally, add soya yogurt to the mix.

Chocolate Chia Pudding

During the Great Depression, people had to come up with simple and filling recipes as the resources were scarce. Luckily that’s not the case today, but the isolation can sometimes make you feel like you’re out of options, especially when you don’t have anything sweet at home. Next time the sugar cravings kick in, try making this water pie.

Ingredients:

  • a pie crust
  • 12 oz water
  • 4 tablespoons flour
  • 1 cup of sugar
  • 5 tablespoons of butter
  • 2 teaspoons vanilla

Instructions:

  1. Preheat the oven to 400F. Take the pie crust out of the package and put it on a baking sheet.
  2. Pour the water into crust.
  3. Take a small bowl and mix sugar and flour. Sprinkle equally on top of the water. Don’t Stir.
  4. Now sprinkle the vanilla.
  5. Arrange the butter cut into smaller pieces on top of other ingredients.
  6. Bake the pie at 400 for 30 minutes, reduce the oven heat to 375F and bake for 30 more minutes.
  7. It will be liquidy when you take it out, but don’t worry about it. Let it cool down and store in the fridge before serving.

If you have some banana bread you’re not sure what to do with, you can make these delicious banana bread truffles that can be an in-between meals snack or an after-lunch dessert. You can use store-bought or homemade banana bread to make this recipe; it’s really great when you have leftover banana bread that you don’t want to go bad.

Ingredients:

  • banana bread, 12 oz
  • 1/2 to 1 cup vanilla or cream cheese frosting
  • chocolate candy coating, 1 lb
  • finely chopped pecans, 1/4 cup

Instructions:

  1. Crumble the banana bread with your hands in a large ball. Add frosting and stir with a spatula until you get an even mixture. The amount of frosting you need may depend on the dryness of your banana bread.
  2. Make 1-inch balls out of the prepared mixture and place them on a baking sheet lined with waxed paper. Refrigerate for a few hours; you can also do this a few days in advance and leave the truffles in the fridge until you’re ready to continue.
  3. Microwave the candy coating until melted. Using a fork or a toothpick, dip each ball into the candy coating. Sprinkle some chopped pecans on each ball and put it back on the baking sheet.

Traditionally, mochi has been served as a part of celebratory meals around holidays. It’s considered a delicacy and a rare treat, although today it’s consumed more commonly. There are two methods for making it. One includes steaming the rice, and the other includes drying the rice and making a mochi powder or mochiko before steaming it with water.

All you need is to chop up 140g of strawberries and place them in a large bowl with condensed milk and 500g of Greek yogurt. Freeze it overnight and remember to remove it from the freezer around 15 minutes before serving.

Apple Crunch

Peel and chop up some apples and place them in a pan with water. Heat the pan on the stove and once the water is boiling, pour 340g of oats, two teaspoons of vanilla extract, and two tablespoons of cinnamon. Finally, add soya yogurt to the mix.

Chocolate Chia Pudding

This chocolate pudding takes just five minutes to make. Put chia seeds, almond milk, cacao powder, maple syrup, and vanilla extract into a bowl and whisk thoroughly. Add frozen berries to top it all off and freeze the dessert overnight.

During the Great Depression, people had to come up with simple and filling recipes as the resources were scarce. Luckily that’s not the case today, but the isolation can sometimes make you feel like you’re out of options, especially when you don’t have anything sweet at home. Next time the sugar cravings kick in, try making this water pie.

Ingredients:

  • a pie crust
  • 12 oz water
  • 4 tablespoons flour
  • 1 cup of sugar
  • 5 tablespoons of butter
  • 2 teaspoons vanilla

Instructions:

  1. Preheat the oven to 400F. Take the pie crust out of the package and put it on a baking sheet.
  2. Pour the water into crust.
  3. Take a small bowl and mix sugar and flour. Sprinkle equally on top of the water. Don’t Stir.
  4. Now sprinkle the vanilla.
  5. Arrange the butter cut into smaller pieces on top of other ingredients.
  6. Bake the pie at 400 for 30 minutes, reduce the oven heat to 375F and bake for 30 more minutes.
  7. It will be liquidy when you take it out, but don’t worry about it. Let it cool down and store in the fridge before serving.

If you have some banana bread you’re not sure what to do with, you can make these delicious banana bread truffles that can be an in-between meals snack or an after-lunch dessert. You can use store-bought or homemade banana bread to make this recipe; it’s really great when you have leftover banana bread that you don’t want to go bad.

Ingredients:

  • banana bread, 12 oz
  • 1/2 to 1 cup vanilla or cream cheese frosting
  • chocolate candy coating, 1 lb
  • finely chopped pecans, 1/4 cup

Instructions:

  1. Crumble the banana bread with your hands in a large ball. Add frosting and stir with a spatula until you get an even mixture. The amount of frosting you need may depend on the dryness of your banana bread.
  2. Make 1-inch balls out of the prepared mixture and place them on a baking sheet lined with waxed paper. Refrigerate for a few hours; you can also do this a few days in advance and leave the truffles in the fridge until you’re ready to continue.
  3. Microwave the candy coating until melted. Using a fork or a toothpick, dip each ball into the candy coating. Sprinkle some chopped pecans on each ball and put it back on the baking sheet.
  4. Refrigerate for at least 20 minutes before serving.

Traditionally, mochi has been served as a part of celebratory meals around holidays. It’s considered a delicacy and a rare treat, although today it’s consumed more commonly. There are two methods for making it. One includes steaming the rice, and the other includes drying the rice and making a mochi powder or mochiko before steaming it with water.

Thanks to the starch in rice, mochi becomes sticky when heated.
