When it’s cold outside, there’s nothing quite like a hot alcoholic beverage to help you feel warm and toasty. This buttered rum cocktail practically screams fall in a glass, and it even has ice cream—yes, you heard that right, ice cream! You’ll want to cozy on up by the fireplace while sipping on this cocktail.
Ingredients
Buttered Rum Batter
- 4 tablespoons butter, softened
- 3 tablespoons packed brown sugar
- 1/2 cup vanilla ice cream, softened
- 1/2 teaspoon ground cinnamon
Rum Drink
- 2 cups apple cider
- 1 cup rum
Instructions
- For the batter: In a mixing bowl, beat the butter and brown sugar until it’s fluffy. Then beat in the ice cream and cinnamon. Put the mixture in a mason jar or another kind of resealable container. Store in the freezer until hardened, about 2 hours.
- For the drinks: In a medium saucepan, heat cider until boiling, stirring occasionally. Then remove it from the heat and pour it into a pitcher.
- Put about 2 tablespoons of buttered rum batter into four mugs. Fill about 1/3 of the way with rum, then top with the apple cider. Stir and enjoy!
