Spice Up Your Breakfast With Huevos Rancheros

Happy Cinco de Mayo! We are starting out our day with this beautiful mess! Sheet-pan Huevos Rancheros with all the fixings so that everyone can ‘make their own’ : : : : Preheat broiler. Lay 6 corn tortillas down on sheetpan and brush with oil. Broil for 1-2 minutes or y til just starting to turn golden. Remove from over and preheat to 400F. Spread a layer of refried beans down. Add some Ranchero sauce. Create a little divot in the Beans so the the Egg has a place to rest. Carefully crack the egg into the center of the tortilla. Bake for 10 minutes or until eggs are set. Top with extra ranchero sauce, avocado, sour cream, jalapeños and cilantro. : : : : Sheet-pan Huevos Rancheros : : : : : : Ranchero Sauce 1 tbls olive oil 1/4 cup peeled and chopped onion 2 cloves garlic chopped 1 can (15oz) tomato sauce 1 jar (12oz) Roasted Peppers 1 can (4.5oz) green chiles 1 cup chicken stock 1 tbls cumin 1/3 tsp smoked paprika 1/4 tsp cayenne 1/2 tsp salt 1/4 tsp black pepper 1 tbls brown sugar 1/4 teaspoon liquid smoke 1/2 cup heavy cream * Sauté up onion and garlic in olive over medium heat in a medium sized pot for 2-3 minutes. Add all remaining ingredients, except for the heavy cream. Simmer the ranchero sauce for 10 minutes. Remove from heat. Using an immersion blender, puree the ranchero sauce until smooth. Then stir in the heavy cream. Ingredients:

  • 1 can of whole peeled tomatoes
  • 1/4 cup of cilantro
  • 1/4 cup of diced onion 
  • 1 clove of garlic
  • 1 jalapeno pepper
  • 5 oz of diced chorizo 
  • Corn tortillas 
  • 1 can of refried beans
  • 4 eggs 
  • 1 diced or sliced avocado 
  • 3/4 cup of queso fresco or the cheese of your choice
  • Vegetable oil 
  • Salt and pepper to your taste

Instructions:

  1. In a high-speed blender or food processor pour in the whole peeled tomatoes, onions, cilantro, garlic, jalapeno, and 1/2 teaspoon of salt. 
  2. Blend until smooth and then pour it into a skillet to simmer for 10-15 minutes over medium heat. 
  3. Turn it down to low while you make the rest of the ingredients. 
  4. In another skillet, fry the chorizo until brown and put it into the sauce.
  5. Pour 1 tablespoon of oil into the large skillet and fry the tortillas for 30 seconds on each side, adding more oil if you need to. 
  6. Heat up refried beans in the large skillet and then put them over the tortillas. 
  7. Finally, add more oil to the large skillet and fry the eggs. 
  8. To assemble, put the tortillas with the beans down first, followed by the eggs, the sauce, and finally top with avocado and cheese! Enjoy!
