Say hello to your new BFF: Sheet Pan Pistachio Pesto Salmon ? Salmon is actually the EASIEST protein to cook (in my opinion) because you can just pop it in the oven and it comes out perfect every time, plus you don’t have to worry about undercooking it like you do with chicken. I actually prefer my salmon a little raw on the inside! This makes the perfect week night meal that is done in 15 minutes and just one pan to clean up ?? If you’ve been following me for a while and haven’t made a recipe yet, this is it! . Preheat your oven to 400 degrees. Microwave your baby red potatoes for 5 minutes then add to the sheet pan and coat with @chosenfoods avocado oil, salt and pepper (you could also bake them prior to adding the fish and veggies for about 20 min). Next add your salmon and coat with your Pistachio Pesto! Either blend 2-3 tbsp de-shelled pistachios to 1/2 cup pesto or to make your own blend 1 cup basil, 1/4 cup olive oil, 2-3 tablespoons pistachios, 2 cloves garlic, 2 tablespoons Parmesan cheese, and 1 tsp black pepper. Add your veggie- I did asparagus coated in @fourthandheart ghee, garlic, salt and pepper. Bake for 13-15 minutes then serve! Lasts for 3 days in the fridge ?? #broccyourbody #byb #healthyrecipes #sheetpanrecipes #pestosalmon #easyrecipes #glutenfree #mealpreprecipes

Preheat the oven to 425 degrees Fahrenheit. Pulse the basil, nuts, garlic, cheese, olive oil, lemon juice, salt and pepper in a blender or a food processor until smooth. Cover a large baking sheet with a layer of parchment paper. Place the salmon filets skin side down on the baking sheet. Spoon about a tablespoon or two of the pesto on top of each piece of fish. Bake the salmon in the oven for about 12 minutes or until fully cooked through. Serve immediately with leftover pasta and another squeeze of lemon juice.
