Simple And Delicious Potato Salad Recipe

Potato salad is a classic dish that graces many tables during family gatherings, picnics, and barbecues. Its creamy texture and comforting taste make it a favorite for many. Ingredients:

  • 2 pounds of potatoes (Yukon Gold or Red potatoes work best)
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/2 cup finely chopped red onion
  • 1/2 cup celery, finely chopped
  • 4 hard-boiled eggs, chopped
  • 2 tablespoons of pickle relish
  • Salt and pepper to taste
  • Paprika (optional, for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Wash and peel the potatoes, then cut them into bite-sized pieces. Boil in salted water until tender but firm, about 10 minutes, then drain. 
  2. In a small bowl, mix mayonnaise and mustard to create the dressing. In a larger bowl, combine the cooled potatoes, red onion, celery, pickle relish, and chopped hard-boiled eggs. 
  3. Add the dressing, stirring gently to coat everything. Season with salt and pepper. 
  4. Chill the salad for at least an hour. 
  5. Before serving, stir again, adjust seasoning if necessary, and garnish with paprika and fresh parsley.
