Ingredients:

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour
  • 1/2 cup strawberry jelly
  • 1/2 cup peanut butter
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/4 cup granulated sugar

Instructions:

  1. Pour the flour, baking soda, and salt into a medium bowl. Whisk together using a handheld mixer on a medium-high speed and beat in the butter and peanut butter until smooth.
  2. Add the brown sugar, granulated sugar, egg, and vanilla extract and beat until creamy.
  3. Pour the dry ingredients into the mix and beat using the handheld mixer on medium speed.
  4. Scoop out the dough using a medium-sized cookie scoop, thereby creating the individual cookies. Press your thumb into the center of each cookie to create a hole and fill it with 1 teaspoon of jelly. Press the dough back together and roll it into a ball.
  5. Preheat oven to 350°F and refrigerate the cookies for 30 minutes. Once the oven is ready, bake cookies for about 12 minutes, until the edges are set and the centers are still somewhat soft.
