You will fall in love with these simple sablé from the moment you try this recipe.
Ingredients
- 2 1/4 cups of flour
- 3/4 teaspoon of cardamom
- 3/4 teaspoon of kosher salt
- 1/2 cup of sugar
- 2 vanilla beans
- 1 cup of room temperature unsalted butter
- 1 egg
- 1/4 cup of honey
Recipe
- Whisk the flour, cardamom, and salt in a medium-sized bowl and set to the side.
- Scrape the seeds out of the vanilla beans and put them into a separate bowl along with the sugar. Use your fingers to mix the sugar and vanilla to make a sand-like texture and then add in the butter and mix on medium with a hand mixer until smooth.
- Add in just the yolk of the egg as well as the honey to the butter-sugar bowl. Beat for 30 seconds then turn down the speed to low and add in half the dry ingredients. Mix to just combine before adding the other half.
- Knead the dough for a couple of minutes by hand to make sure everything is incorporated.
- Divide the dough in half, make two 9-inch logs and wrap in parchment paper followed by in plastic wrap. Roll the logs on the counter to make sure they’re very round.
- Put them in the fridge for 2 hours, unwrap, and cut the dough into circles.
- Put them onto a parchment-lined baking sheet and bake for 13-18 minutes at 350 F, making sure to rotate them halfway through.
- Cool for 5 minutes on the tray, transfer to wire racks, and enjoy!
