Ingredients:
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup coconut flour
- 2 tablespoons almond butter
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup finely chopped pecans or walnuts (optional)
- 1/4 cup powdered sugar or coconut sugar (for rolling)
Instructions:
- In a large bowl, mix together the pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth.
- In a separate bowl, combine the almond flour, coconut flour, pumpkin pie spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms. If the mixture is too wet, add more coconut flour, one tablespoon at a time.
- If using, fold in the chopped nuts.
- Refrigerate the dough for about 30 minutes to make it easier to handle.
