James Wythe Will Teach You How to Make 100% Vegan Cauliflower Cheese

The cauliflower craze isn’t dying down anytime soon, and we’re constantly being presented with new ways to eat this delicious veggie. Cauliflower cheese is Instagram’s latest obsession, and it’s surprisingly easy to make.

The internet is overflowing with recipes that either utilize regular or vegan cheese, but what if you’re looking for a plant-based and dairy-free recipe without any actual cheese? 

James Wythe shared the recipe that you’re searching for on his food blog Healthy Living James, and it’s just as good as it sounds. If, however, you prefer the real thing, just skip the yeast from his recipe and use some grated cheese instead.

Ingredients

  • 1 cauliflower
  • 200 ml unsweetened almond milk
  • 4 tbsp nutritional yeast
  • 1 tbsp olive oil
  • 1 tsp dijon mustard
  • 50 g cashews
  • salt and pepper

Instructions

  1. While preheating the oven to 200C, cut the cauliflower into pieces, and let them simmer in the boiling water for about five minutes.
  2. Soak your cashews in a separate bowl of hot water for five minutes, and place them in a blender after draining them.
  3. Add almond milk, nutritional yeast, olive oil, mustard, salt, and pepper in the blender with cashews and blend until smooth.
  4. Drain the boiled cauliflowers, place them into a baking dish or skillet pan, pour the sauce over them, and let them bake for approximately 15-20 minutes or until golden.
