| HEALING ARTICHOKES | With all the superfood talk we have today, artichokes should be right there in the top 10 list. Artichokes are one of the most abundant sources of nutrition, filled with phytochemicals such as lutein and isothiocyanates; vitamins such as A, E, and K; amino acids; and enzymes.   1. Start by filling up a pot of water most of the way up, and bring it to a boil. You want the artichokes to be completely submerged so they cook evenly.
  2. To the pot, add some salt, a bay leaf, and half a lemon juiced. All of these items will flavor the water and make the artichokes taste even better.
  3. Clean the artichokes by peeling away the first few leaves off and cut most of the stem so only about an inch or 2 is left.
  4. Finally, put the artichokes in and let them boil for about 25-30 minutes. Test whether they are done by pulling off a leaf and checking if it’s tender.
  5. Serve with dipping sauces like a vinaigrette, aioli, or just melted butter and lemon.
