  • ice
  • 1 ounce Cointreau
  • 1 ounce fresh lemon juice
  • 1 ounce simple syrup
  • 1 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon tartar cream
  • 2 ounces limoncello
  • 3 ounces vodka

  1. Cook the eggs and mix egg whites in a bowl along with sugar, tartar cream, and salt, whisking until the sugar dissolves.
  2. Warm the mixture over simmering water but make sure the bowl doesn’t touch it. Continue whisking until your instant-read thermometer reads 160°.
  3. Beat on high speed for 5 to 6 minutes.
  4. Pour the meringue into a resealable bag. Keep at room temperature
  5. Pour the vodka, Cointreau, limoncello, lemon juice, and simple syrup into a cocktail shaker. Top off with ice and shake for 20 seconds until frosty.
  6. Strain the cocktail into 2 martini glasses, dividing it evenly. Pour the meringue in a circular motion onto each cocktail.
  7. Use a kitchen torch to lightly toast the top of each meringue.
