Spaghetti carbonara is a classic dish to make when you want something warm and comforting. It’s the perfect dish for Saturday night alone with Netflix or to make when you want to impress a date with your cooking skills. Here’s the easiest way to make it. The amount below is enough for four people, so adjust the ingredients accordingly.
Ingredients:
- 1 piece of chicken breast, around 8 oz
- salt
- 1/2 teaspoon ground black pepper
- 3 oz parmesan cheese
- 4 oz diced pancetta
- 1 tbsp olive oil
- 12 oz spaghetti
- 4 eggs
- parsley leaves for garnish
Instructions:
- Cut chicken breast into thin strips and season with salt and pepper.
- Grate parmesan cheese into a bowl. Transfer 1/2 cup of it into a separate bowl to use as garnish.
- Take a large pot and fill around 3/4 of it with water. Add salt and let it boil. Add spaghetti and cook until al dente.
- In a separate pan, heat olive oil over medium heat and add pancetta. Stir occasionally and let cook until golden brown, no longer than a couple of minutes. Add chicken and cook until the meat is cooked through. Remove from heat.
- Break 4 eggs and season with pepper. Whisk to combine. Add parsley leaves.
- Once your spaghetti is cooked, drain them but leave around 1/2 cup of the cooking water. Transfer hot pasta into the skillet with chicken and pancetta. Pour the egg mixture over it.
- Stir everything together with tongs or a fork and slowly add some of the pasta water to make a thick sauce.
- Garnish with parsley and parmesan cheese. Enjoy warm.
