Cookie and Kate’s Veggie Pizza is Almost Too Pretty to Eat

Who doesn’t love pizza? We’re always trying to find new ways to dress up pizza—and Cookie and Kate shared an amazing one for veggie pizza. Called the ultimate veggie pizza—it most certainly is, as it’s loaded with cherry tomatoes, artichokes, bell peppers, olives, red onions, and spinach, as well as classic ingredients like tomato sauce and mozzarella cheese. This recipe makes two 11-inch pizzas or 1 large one. Keep reading to find out how to make it!

Ingredients

  • 1 batch easy whole wheat pizza dough or 1 pound store-bought pizza dough
  • 1 cup pizza sauce or marinara
  • 2 cups baby spinach
  • 2 to 3 cups (8 to 12 ounces) shredded low-moisture part-skim mozzarella cheese
  • 1/2 cup jarred or canned artichoke, cut into 1-inch pieces
  • 1/2 cup fresh red or orange bell pepper, cut into narrow 2-inch strips
  • 1/2 cup red onion, cut into thin wedges
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup pitted Kalamata olives, halved lengthwise
  • 1/2 cup sliced almonds (optional)
  • Optional garnishes: Fresh basil, red pepper flakes and/or finely grated Parmesan cheese

Instructions

  1. Preheat the oven to 500 F with a rack in the upper third of the oven. If you want to use a baking stone or baking steel, place it on the upper rack.
  2. Prepare the pizza dough as the instructions say.
  3. Evenly spread pizza sauce on the two pizzas, while leaving around 1 inch bare around the edges.
  4. Distribute the spinach evenly on top of the sauce and the cheese on top of the spinach.
  5. Place artichoke, bell pepper, tomatoes, red onion, olives, and almonds on top of the pizzas.
  6. Bake the pizzas in the oven until the crust is golden and the cheese is bubbling and golden, about 10 to 12 minutes.
  7. Move the pizzas to a cutting board and top them with fresh basil, red pepper flakes, and Parmesan.
  8. Slice, serve, and enjoy!
