Another very popular cheese, mozzarella is perfect on pizzas, in pasta sauces, or on anything baked. It becomes a beautifully molten mess that browns on top and has just the perfect texture.

Camembert

This strong traditional French cheese can be eaten hot or cold. If you heat it in the oven or the microwave, it has a beautifully molten interior encased in a firm outer casing. Perfect for sandwiches and for dipping.

This buttery, fruity, nutty cheese is a satisfying addition to a sandwich, cheese board or fondue. Just apply a light heat, and it will make your heart melt.

Asiago

You can get an older form of Asiago or a younger strain known as fresco. The older form of the cheese is firmer, and very good for grating. But the younger fresco model is much better for melting.
