Savor the flavors of spring with this light and refreshing pea and mint soup. It has a zestiness to it as well as a wholesome fresh and will go great with crusty bread dipped in. Here’s a recipe for how to make it.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion
  • 3 cloves of garlic
  • 4 cups of frozen peas
  • 4 cups of vegetable broth
  • 1/2 cup of fresh mint leaves, plus extra for garnish
  • Salt
  • Black pepper
  • 1 tablespoon lemon juice
  • Greek yogurt or crème fraîche for serving

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened. Add minced garlic and cook for an additional minute until fragrant.
  2. Pour in the vegetable broth and bring the mixture to a boil. Add frozen peas to the pot and cook for about 3-5 minutes or until peas are tender. Stir in fresh mint leaves and cook for an additional 2 minutes.
  3. Remove the pot from heat. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth.

Ingredients:

Hollandaise Sauce

  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup of melted unsalted butter
  • Salt

Poached Eggs

  • 4 large eggs
  • 1 tablespoon white vinegar
  • Salt

Salmon And Bread

  • 4 slices of smoked salmon
  • 4 English muffins
  • Fresh chives, chopped, for garnish

Instructions:

Hollandaise Sauce

  1. In a food processor, combine egg yolks and lemon juice. Blend until smooth.
  2. While the food processor is running, slowly stream in the melted butter until the sauce thickens. Season with salt and black pepper. Keep the Hollandaise warm.

Poached Eggs

  1. Fill a large, shallow pan with water and add white vinegar and a pinch of salt. Bring the water to a gentle simmer.
  2. Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water and carefully slide each egg into the center of the whirlpool. Poach for about 3 minutes for a runny yolk or longer for a firmer yolk.
  3. Use a slotted spoon to lift the poached eggs from the water and drain on a paper towel.

Putting It Together

  1. Place a toasted English muffin on each plate. Butter each muffin and top with half a slice of smoked salmon. Carefully place a poached egg on each salmon-covered muffin.

Keep reading for a short list of what you should eat while pregnant to ensure that you and the baby are properly nourished.

Fruits

Enjoy fresh fruits that are high in potassium such as mangos, bananas, and berries. They also provide added water, healthy carbs, and antioxidants.

Salmon

While it’s best to avoid some seafood during pregnancy, due to mercury and other contaminants, salmon, sardines, and anchovies are all excellent choices, high in Omega 3 fatty acids that are essential for your cardiovascular health, and help build the eyes and brain of your baby. Avoid fish that is raw or undercooked, or high in mercury when pregnant.

Dark, Leafy Greens

Dark leafy greens such as kale and spinach will add essential minerals and fiber to your diet. Other benefits include fiber, vitamin C, vitamin K, vitamin A, calcium, iron, folate, and potassium. Their fiber content can also help prevent constipation, and studies have linked high fiber intake with reducing the risks of low birth weight.

Lean Meat and Protein

Lean beef, pork, and chicken are needed during pregnancy and in higher amounts. Low levels of iron during early and mid-pregnancy are linked to higher risks of lower birth weights and other complications.

Savor the flavors of spring with this light and refreshing pea and mint soup. It has a zestiness to it as well as a wholesome fresh and will go great with crusty bread dipped in. Here’s a recipe for how to make it.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion
  • 3 cloves of garlic
  • 4 cups of frozen peas
  • 4 cups of vegetable broth
  • 1/2 cup of fresh mint leaves, plus extra for garnish
  • Salt
  • Black pepper
  • 1 tablespoon lemon juice
  • Greek yogurt or crème fraîche for serving

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened. Add minced garlic and cook for an additional minute until fragrant.
  2. Pour in the vegetable broth and bring the mixture to a boil. Add frozen peas to the pot and cook for about 3-5 minutes or until peas are tender. Stir in fresh mint leaves and cook for an additional 2 minutes.
  3. Remove the pot from heat. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth.
  4. Season the soup with salt and black pepper to taste. Stir in lemon juice for a hint of brightness. If desired, serve the pea and mint soup with a dollop of Greek yogurt or crème fraîche and garnish with additional mint leaves.

Ingredients:

  • 4 boneless meat cutlets (veal, chicken, or pork), about 1/4 inch thick
  • Salt and pepper, to taste
  • 2 large eggs
  • 1 cup all-purpose flour
  • 2 tablespoons milk
  • 2 cups breadcrumbs
  • Vegetable oil, for frying
  • Lemon wedges, for serving

Instructions:

  1. Start by tenderizing the meat cutlets to about 1/4 inch thickness using a meat mallet. Season both sides of each cutlet with salt and pepper.
  2. Find three shallow dishes. In the first dish, place the flour. Beat the eggs and milk in the second dish, and in the third dish, spread out the breadcrumbs.
  3. Dredge each cutlet first in flour, shaking off any excess. Dip it into the egg mixture, ensuring it’s fully coated. Finally, coat it well with breadcrumbs.

  • Versatile spice blend of choice- we recommend lemon pepper or chili lime
  • 3 garlic cloves or minced garlic
  • s and p to taste
  • avocado oil
  • fresh dill or parsley for garnish

Instructions:

  • Place your salmon on top of some tin foil and line it with your toaster oven baking tray
  • Coat the fish with oil until it is fully coated, then add your spices and garlic on top
  • Cook in the toaster on high for 12-15 minutes
  • Let the fish cool and add fresh herbs
  • Serve with a side of rice and steamed veggies and enjoy!

The combination of salmon, Hollandaise sauce, and poached eggs is delicious. Start your day on a decadent note with this luxurious breakfast recipe.

Ingredients:

Hollandaise Sauce

  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup of melted unsalted butter
  • Salt

Poached Eggs

  • 4 large eggs
  • 1 tablespoon white vinegar
  • Salt

Salmon And Bread

  • 4 slices of smoked salmon
  • 4 English muffins
  • Fresh chives, chopped, for garnish

Instructions:

Hollandaise Sauce

  1. In a food processor, combine egg yolks and lemon juice. Blend until smooth.
  2. While the food processor is running, slowly stream in the melted butter until the sauce thickens. Season with salt and black pepper. Keep the Hollandaise warm.

Poached Eggs

  1. Fill a large, shallow pan with water and add white vinegar and a pinch of salt. Bring the water to a gentle simmer.
  2. Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water and carefully slide each egg into the center of the whirlpool. Poach for about 3 minutes for a runny yolk or longer for a firmer yolk.
  3. Use a slotted spoon to lift the poached eggs from the water and drain on a paper towel.

Putting It Together

  1. Place a toasted English muffin on each plate. Butter each muffin and top with half a slice of smoked salmon. Carefully place a poached egg on each salmon-covered muffin.
  2. Generously spoon Hollandaise sauce over the poached eggs.
  3. Season with salt and black pepper to taste.
  4. Garnish with chopped fresh chives for an extra burst of flavor.
