Whether you’re trying to warm up in the winter or you’re looking for a tasty and nourishing appetizer to get your meal off to the right start, miso soup can go a long way to satisfying your tastebuds. Here is how you can make a nourishing miso soup in as little as 15 minutes.

Ingredients:

  • 8 ounces ramen noodles
  • 8 cups water
  • 2 cups spinach
  • 2 tablespoons soy sauce
  • salt
  • scallions
  • 1/2 cup white miso paste
  • 14 ounces tofu
  • 5 grams dried seaweed

Instructions:

  1. Place a pot over a high heat. Pour water into the pot and then whisk in the miso paste and soy sauce. Chop up the spinach and the tofu as you wait for the water to boil.
  2. Once the pot of water is boiling, reduce the heat and add noodles, cooking for 3 minutes. Add the tofu and spinach and continue to cook for around another 30 seconds. Top with seaweed and scallions before serving.

You’ll be pressed to find a menu in New England that doesn’t feature seafood. Shellfish is a huge part of the region’s cuisine, and seafood chowder is regarded as one of the top dishes. If you are craving some of that New England grub, this chowder will hit the spot.

Ingredients:

  • 1¼ pounds mixed white fish (cod /swordfish / sea bass / halibut) and shellfish (crab meat / scallops / shrimp)
  • 8 ounces cooked lobster meat, cut into cubes (optional)
  • 1 pound potatoes, peeled
  • 1 large onion, finely chopped
  • 1 celery stalk, finely chopped
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • ½ cup half-and-half
  • 1 tablespoon dry sherry
  • 2½ cups clam juice, divided
  • 2 cups fish or seafood stock or broth
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon freshly ground black pepper

Instructions:

  1. Melt 1 tablespoon of butter in a Dutch oven or other large heavy pot over medium heat. Cook the onion and celery, stirring often, for about 5 minutes, until translucent. 
  2. Add in the Old Bay and black pepper and cook for another 30 seconds.
  3. Pour in the sherry and cook until alcohol has cooked off, then add in half a cup of clam juice and bring to a simmer.
  4. Allow the vegetables to become soft before pouring in the stock or broth and the remaining clam juice. Bring to a boil over high heat. 
  5. Cut the potatoes into half-inch pieces and simmer for 5 minutes, uncovered, until just tender. Adjust the heat as needed.
  6. Chop the white fish and shellfish into half-inch pieces and add into the pot. Cook for about 2 minutes a, stirring gently, just until the mixture returns to a simmer. Remove from the heat and stir in the cooked lobster meat. 
  7. While the potatoes are simmering, melt the remaining butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minutes, whisking constantly, until the roux is light blond in color. Whisk in the half-and-half and 1 cup of the chowder broth  that has been skimmed off the top. Bring to a simmer, whisking constantly. Cook, still whisking, until the chowder is thick and creamy.

Contrary to popular belief, soup can be enjoyed during any, and every, season. Too hot to have a bowl of chicken noodle? No problem, this chilled beetroot soup has you covered! And have we mentioned that it’s pink?

Ingredients:

  • 2 small beetroots
  • 2-3 tablespoons lemon juice
  • 400 mililiters water or vegetable stock
  • 3 cups Greek yogurt
  • 3-4 tablespoons dill, finely chopped
  • 4 tablespoons chives, finely chopped
  • 10 radishes, coarsely grated
  • 1 cucumber, peeled and coarsely grated
  • 1 garlic clove

Instructions:

  1. Peel the beets and grate them coarsely. Place them in a large pot with the water or vegetable stock and lemon juice. Cover and bring to a boil. Allow to simmer for 5 minutes before removing from the heat and leaving to cool completely.

This creamy, warm, black bean soup can make your chilly fall days so much better. Done in less than an hour, it’s all you need to stay healthy this season. Find all the ingredients and instructions below and roll up your sleeves.

Ingredients

  • 2 15-oz cans black beans
  • 2 roughly chopped medium yellow onions
  • 1/3 cup sour cream
  • 1 teaspoon ground coriander
  • 2 peeled and roughly chopped carrots
  • 4 cups low-sodium chicken broth
  • 1/3 cup sour cream
  • 4 crushed and peeled large garlic cloves
  • 3/4 teaspoon oregano
  • 1/2 teaspoon salt
  • 1 3/4 teaspoons ground cumin
  • handful chopped fresh cilantro
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh lime juice
  • 1/8 teaspoon cayenne pepper

Instructions

Add the oil to a soup pan. Once it’s hot, start cooking the garlic cloves, onions and carrots. The onions should get a translucent color when they’re done.

After 8 minutes you can include the oregano, chicken broth, cayenne pepper, black beans, cumin, and coriander. Wait for the mix to start boiling.

Now, lower the heat, put the lid on and let it simmer for 15 minutes.

When it’s done, transfer the black bean soup to a blender or a food processor. Pulse until you get a creamy mixture.

Add the salt, pepper, and lime juice. Serve the soup right away, while it’s hot.
