8oz vegan cream cheese
2 cups raw cashews
1 1/2 tablespoon agave syrup

4 tablespoons lemon juice
2-5 tablespoons water
1/8 teaspoon black pepper
3/4 teaspoon salt
If you are not vegan feel free to use any cream cheese that you like. Decorate it on top with virgin olive oil at the end.
Soak the cashews overnight and drain them the next morning.
Rinse, then put the cashews in a blender. Add the agave syrup, cream cheese, Italian seasoning, lemon juice, salt, and pepper. Blend everything until you get a smooth mixture. Use high speed to get an even consistency.
Get a bowl and line it with parchment paper. Use several layers of paper on the walls of the bowl. It is supposed to get the moisture out of the cashew cheese spread. Put the spread inside the bowl and cover it with a wrap.
Leave the bowl in the fridge for one hour at least. Transfer the spread on a plate. Remove the parchment paper and decorate the spread with nuts and olive oil.

For shrimp cocktail, you can boil or fry the shrimp but we recommend steaming because there is less of a chance of overcooking the shrimp. As soon as you start to see the shrimp float in the boiling water (after just a couple minutes) remove and put on ice. This is a very fast process.
Allow for at least a half hour on ice and in a freezer for the shrimp to cool.
While you are waiting, make the dipping sauce. The most simple sauce is just ketchup and horseradish to taste. Then make sure to cut some lemon lightly squeeze over the shrimp.
Lastly, pair with a nice cocktail such as a dirty martini or Bloody Mary, and enjoy!
