These stuffed spinach and garlic ricotta shells with this delicious creamy pumpkin sauce is seriously no joke 😍 although there may seem like a lot of ingredients, they are incredibly easy to make. Over here in my Italian household you can’t go wrong with cheese, pasta and garlic. With the combination of ricotta, pumpkin, cashews, and coconut milk , it offers a creamy and nutty balance which gives a delicious blend of flavour. Stuffed Shells: 12 Pasta Shells (gf option) 2 cups Ricotta 1 cup Spinach 1 tbsp Garlic (minced) 1 tsp Sea Salt 1/4 tsp Black pepper Pumpkin Sauce: 1 can Pumpkin Puree @farmersmarketfoods 1/2 cup Raw Cashews (soaked 10-15 min) 1 cup Coconut Milk 1/4 cup Tomato Paste 1 Tbsp Garlic (minced) 1 Tsp Salt Toppings: Parsley, chopped spinach, Red chilli peppers. 1) Pre-heat oven to 350 degrees F. In a medium saucepan, bring water to boil and cook the pasta according to the package. 2) In another small saucepan, add all of the pumpkin sauce ingredients (minus the cashews) and whisk together over medium heat. 3) Add the pumpkin sauce to a food processor and blend with the cashews until smooth. Transfer sauce to a skillet and set aside. 4)clean out the food processor and combine all of the ricotta stuffing ingredients and lightly blend. 5) Stuff each pasta shell with the ricotta filling until completely filled. 6) Add the stuffed shells over the pumpkin sauce and bake in the oven for 15-minutes. 7) Remove from oven, let cool, and add toppings! *All ingredients can be found at @vitahealth Winnipeg * #eatsbytee #sponsored

Starting the day right is very important, so instead of having donuts, pastry, or bacon for breakfast, you can switch it up with a pumpkin smoothie. You’ll love this smoothie so much that you’ll start making it often. Let’s not forget to mention that it has a low sugar content.

Ingredients:

  • 1 cup milk of choice
  • 1 scoop of protein powder
  • 1 cup of frozen pumpkin puree
  • 1/4 teaspoon pumpkin pie spice
  • 2 tablespoons of liquid sweetener (honey, maple syrup, agave)
  • 1/2 cup of frozen cauliflower florets
  • pinch of salt
  • 1 tablespoon of nut butter

Instructions:

It’s autumn, which means it’s time for everything pumpkin spice. If you love chocolate chip cookies, this recipe adds the most popular fall spice to them. That way you get the best out of the season and of your favorite dessert.

Ingredients:

When you decide to make these delicious pumpkin chocolate chip cookies you have to grab:
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 1/4 c. all-purpose flour
1 c. unsalted butter
3/4 c. brown sugar
1 teaspoon pumpkin pie spice
1 large egg
2 teaspoons vanilla extract
1/2 c. granulated sugar
3/4 c. pumpkin puree
2 c semi-sweet chocolate chips

How To Make Them:

The time you’ll need to make the pumpkin chocolate chip cookies is around 15 minutes for prep and an hour overall.

First, preheat the oven to 375°. Get a bowl and put the pumpkin spice, baking soda, flour, and salt in.

Grab a second one and place the butter and sugars in and mix them. Beat the eggs, pumpkin, and vanilla extract, then add the mixture in the first bowl. Beat until you get an even mixture.

Before I tell you why I am loving cherries as my snack, a side note first. . I am someone that needs to switch up my foods often because I get bored of eating the same thing every day. Fun fact: switching up your fruits and veggies actually work in our favor! When you include variety when choosing your foods, you are also switching up your nutrients. You can think of it as a nutrient rotation. . Usually I try to go for whatever is in season. This is because they are for the most part cheaper, taste that much better, and are actually more nutrient dense. Lately I have been enjoying cherries! They are absolutely delicious and sweet. Which for me, works great as a snack and when I am craving that something sweet. And the fact that cherries have that beautiful rich color, makes them loaded with nutrients. Just to name a few, cherries are rich in the following: -antioxidants -anti-inflammatory compounds -fiber -vitamin C -vitamin A . I also love cherries because there's a certain level of mindful eating required. You can't just eat them like raspberries or blueberries. You have to remove the stem and then there's the cherry pit that you have to spit out too. These foods, the ones that aren't so easy to eat, are great because they remove us a bit from the auto-pilot. They also help make sure that we don't overeat and give us more time to assess our hunger and feeling full cues. These stuffed spinach and garlic ricotta shells with this delicious creamy pumpkin sauce is seriously no joke 😍 although there may seem like a lot of ingredients, they are incredibly easy to make. Over here in my Italian household you can’t go wrong with cheese, pasta and garlic. With the combination of ricotta, pumpkin, cashews, and coconut milk , it offers a creamy and nutty balance which gives a delicious blend of flavour. Stuffed Shells: 12 Pasta Shells (gf option) 2 cups Ricotta 1 cup Spinach 1 tbsp Garlic (minced) 1 tsp Sea Salt 1/4 tsp Black pepper Pumpkin Sauce: 1 can Pumpkin Puree @farmersmarketfoods 1/2 cup Raw Cashews (soaked 10-15 min) 1 cup Coconut Milk 1/4 cup Tomato Paste 1 Tbsp Garlic (minced) 1 Tsp Salt Toppings: Parsley, chopped spinach, Red chilli peppers. 1) Pre-heat oven to 350 degrees F. In a medium saucepan, bring water to boil and cook the pasta according to the package. 2) In another small saucepan, add all of the pumpkin sauce ingredients (minus the cashews) and whisk together over medium heat. 3) Add the pumpkin sauce to a food processor and blend with the cashews until smooth. Transfer sauce to a skillet and set aside. 4)clean out the food processor and combine all of the ricotta stuffing ingredients and lightly blend. 5) Stuff each pasta shell with the ricotta filling until completely filled. 6) Add the stuffed shells over the pumpkin sauce and bake in the oven for 15-minutes. 7) Remove from oven, let cool, and add toppings! *All ingredients can be found at @vitahealth Winnipeg * #eatsbytee #sponsored

The moment fall arrives, we want to have everything pumpkin. We found the perfect pumpkin smoothie that you can prepare in the morning and get the proper healthy boost for the day. It will take you 5 minutes to prepare it and you’ll be energized for hours.

Starting the day right is very important, so instead of having donuts, pastry, or bacon for breakfast, you can switch it up with a pumpkin smoothie. You’ll love this smoothie so much that you’ll start making it often. Let’s not forget to mention that it has a low sugar content.

Ingredients:

  • 1 cup milk of choice
  • 1 scoop of protein powder
  • 1 cup of frozen pumpkin puree
  • 1/4 teaspoon pumpkin pie spice
  • 2 tablespoons of liquid sweetener (honey, maple syrup, agave)
  • 1/2 cup of frozen cauliflower florets
  • pinch of salt
  • 1 tablespoon of nut butter

Instructions:

  1. There is nothing easier and simpler than making a smoothie. All you need to do is get your blender.
  2. Fill it with the pumpkin puree, cauliflower florets, milk, sweetener, nut butter, salt, and pumpkin pie spice.
  3. Start pulsing until you get a smooth consistency.
  4. If you need to, add more milk or water to make the pumpkin smoothie.
  5. Once you’re done, pour it in a glass and enjoy!

It’s autumn, which means it’s time for everything pumpkin spice. If you love chocolate chip cookies, this recipe adds the most popular fall spice to them. That way you get the best out of the season and of your favorite dessert.

Ingredients:

When you decide to make these delicious pumpkin chocolate chip cookies you have to grab:
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 1/4 c. all-purpose flour
1 c. unsalted butter
3/4 c. brown sugar
1 teaspoon pumpkin pie spice
1 large egg
2 teaspoons vanilla extract
1/2 c. granulated sugar
3/4 c. pumpkin puree
2 c semi-sweet chocolate chips

How To Make Them:

The time you’ll need to make the pumpkin chocolate chip cookies is around 15 minutes for prep and an hour overall.

First, preheat the oven to 375°. Get a bowl and put the pumpkin spice, baking soda, flour, and salt in.

Grab a second one and place the butter and sugars in and mix them. Beat the eggs, pumpkin, and vanilla extract, then add the mixture in the first bowl. Beat until you get an even mixture.

Before I tell you why I am loving cherries as my snack, a side note first. . I am someone that needs to switch up my foods often because I get bored of eating the same thing every day. Fun fact: switching up your fruits and veggies actually work in our favor! When you include variety when choosing your foods, you are also switching up your nutrients. You can think of it as a nutrient rotation. . Usually I try to go for whatever is in season. This is because they are for the most part cheaper, taste that much better, and are actually more nutrient dense. Lately I have been enjoying cherries! They are absolutely delicious and sweet. Which for me, works great as a snack and when I am craving that something sweet. And the fact that cherries have that beautiful rich color, makes them loaded with nutrients. Just to name a few, cherries are rich in the following: -antioxidants -anti-inflammatory compounds -fiber -vitamin C -vitamin A . I also love cherries because there's a certain level of mindful eating required. You can't just eat them like raspberries or blueberries. You have to remove the stem and then there's the cherry pit that you have to spit out too. These foods, the ones that aren't so easy to eat, are great because they remove us a bit from the auto-pilot. They also help make sure that we don't overeat and give us more time to assess our hunger and feeling full cues.
