Here’s a familiar situation: you buy a bunch of bananas, thinking you’ll eat one every day. Why, make this delicious vegan banana bread recipe, of course. Check it out below.

Ingredients:

  • 4 bananas
  • 1/4 cup vegetable oil
  • 1/4 nondairy milk (Choose your favorite. We like oat milk!)
  • 1/2 cup brown sufar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit, ideally using an oven thermometer to confirm the correct temperature.
  2. Grease a loaf pan with nonstick cooking spray or some vegetable oil.
  3. Mash your bananas in a bowl. Add brown sugar, oil, vanilla, and almond milk, whisking until combined.
  4. Now add in the dry ingredients (flour, baking soda, salt, and cinnamon). Stir until combined, being careful not to over stir.
  5. Transfer the batter to your pan, adding optional toppings like nuts, chocolate chips, or sliced bananas.
  6. Bake for 45 minutes. Line the top of the pan with foil and bake for 15 more minutes, or until a toothpick comes out of the center of the banana bread clean.

Everyone seems to be obsessed with banana bread these days, and for a good reason! This is definitely one of the most delicious baked goods on the market, and you can make it even better by putting a healthy twist on it.

Flour Choice

The flour you’re using will make or break your banana bread. It’s best to replace white flour with gluten-free varieties, such as almond and oat flour, if you’re trying to keep your bread on the healthy side.

Healthy Add-Ins

There are many ingredients you can add to your bread to improve its taste. Nuts, seeds, and fruits are some of the most popular healthy options, while chocolate chips are best avoided, or replaced with cacao or dark chocolate.

Avoid Sugar Overload

Adding processed sugar to your banana bread is best avoided because you’ll get that sweet taste that you’re craving from bananas alone. If you insist on making your banana bread sweeter, stick to natural sweeteners, such as honey and maple syrup.

Smaller Portions

Even if you make all of these changes, bananas are still pretty high in carbs. That’s why this baked good is best eaten in moderation, especially if you’re trying to embrace a low-carb approach to your diet.

Banana bread experienced a huge popularity boom in the past few years, but knowing how to keep it fresh is as important as knowing how to make it. It’s highly unlikely you’ll eat a whole loaf in a single sitting, so it’s time to learn how to keep this baked treat fresh for as long as possible.

Kitchen Counter

Leaving your banana bread at room temperature won’t do it any harm if you’re planning to eat it pretty fast. It can stay fresh for up to four days on your kitchen counter, as long as you store it inside an airtight container with a closed lid so it wouldn’t get too soggy.

Fridge Storage

You can extend the shelf life of your banana bread for up to a week by storing it in your fridge. It’s important to use plastic wrap when storing it this way because it won’t go dry as quickly if it’s tightly wrapped because it can keep its moisture for longer this way.

Freezer Storage

If eating your banana bread in a single week doesn’t seem realistic because you made too much, you can store some of it in your freezer for up to three months. You can cut it into smaller pieces if you don’t want to freeze the whole loaf, and it’s highly recommended to use plastic wrap again.

Mushy food doesn’t usually spell out the word appetizing—most of the time. Just saying the word “mushy” is making us uncomfortable even as we’re writing this. But as all seasoned cooks and bakers will know, having mushy food on your hands isn’t always a bad thing. Here are three instances where it’ll benefit you if your food is mushy!

Avocado

All guacamole-lovers knew this one was coming. Indeed, a mushy avocado is exactly what one needs if they’re trying to make themselves a fresh, tasty mix of guac. The mushier, the easier it is to mash up and mix in whichever seasonings you like!

Banana

Banana is another great example of a food that can benefit if it’s mushy. “Can” is the key word here because a solid banana is great on its own as well. It’s just that a mushy food can, alternatively, provide great fodder for a sweet, tasty, banana cake recipe.

Salmon

Perhaps this one is more about personal taste, but we can’t stand cooked salmon when it’s too dry. Does that mean that we’d prefer it to be mushy? To be honest, somewhere in the middle would be preferable, but we’d definitely rather it be moist than hard and dry.

If we had to pick a single dish that defined the last year, we’d have to go with banana bread. Amateur bakers spent the last few months perfecting their recipe for this delicious treat, and you can do it too by avoiding these common mistakes.

Choice of Bananas

Fresh bananas may be delicious when eaten on their own, but they won’t do your banana bread any favors. The riper your bananas are, the easier they’ll be to mash—and your bread will also be much tastier once you take it out of the oven.

Flour Measurements

The amount the flour you use will make or break your banana bread. If you go overboard, your bread will be too dry, but you’ll end up with a jiggly loaf if you don’t use enough. You can avoid this mistake by paying close attention to your recipe and using measuring cups for dry ingredients.

Mixing the Ingredients

You should also keep in mind that gluten can develop when you mix your ingredients, leading to tough and rubbery loaf. Try not to overmix your batter, and your bread will be just as delicious and fluffy as you want it to be.

When your bananas have been left out too long and the skin goes blotchy and black, this doesn’t have to mean they’re doomed to the bin. There are plenty of things you can do with them.

Here are 6 tricks for your old bananas.

Freeze

Rather than throwing your old bananas away, the first thing to do is freeze them. Then you can use them in the future in any of the ways outlined below.

Ice Lollipop

A frozen banana makes an excellent ice lollipop. Just take it out of the freezer and eat it to your heart’s content.

Banana Bread

Old bananas are perfect for this classic dish. Very ripe bananas are sweeter, softer and better for baking than younger bananas.

Milkshake

Put the banana into a blender with a pint of milk, and you have beautiful milkshakes. If you’re feeling indulgent, add a little cream on top.

Smoothie

Whack the old bananas in a blender with your choice of fruits and add ice for a delicious, healthy and refreshing fruit smoothie.

Cake

You can also bake your ripe bananas into cakes. They give the cake a hint of sweet banana without being overpowering.

If you have some banana bread you’re not sure what to do with, you can make these delicious banana bread truffles that can be an in-between meals snack or an after-lunch dessert. You can use store-bought or homemade banana bread to make this recipe; it’s really great when you have leftover banana bread that you don’t want to go bad.

Ingredients:

  • banana bread, 12 oz
  • 1/2 to 1 cup vanilla or cream cheese frosting
  • chocolate candy coating, 1 lb
  • finely chopped pecans, 1/4 cup

Instructions:

  1. Crumble the banana bread with your hands in a large ball. Add frosting and stir with a spatula until you get an even mixture. The amount of frosting you need may depend on the dryness of your banana bread.
  2. Make 1-inch balls out of the prepared mixture and place them on a baking sheet lined with waxed paper. Refrigerate for a few hours; you can also do this a few days in advance and leave the truffles in the fridge until you’re ready to continue.
  3. Microwave the candy coating until melted. Using a fork or a toothpick, dip each ball into the candy coating. Sprinkle some chopped pecans on each ball and put it back on the baking sheet.
  4. Refrigerate for at least 20 minutes before serving.

Lemon Poppy Seed Bread

Once you make this banana bread, we guarantee it will be your next go-to. Trust us, it’s that good. It’s perfectly moist, super easy to make, chocolaty, and it’s a crowd favorite. We suggest doubling up the portion, you can freeze the leftovers. It can be made into muffins or bread; the choice is yours.

  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1/2 12 oz bag chocolate chips
  • nuts of your choice

  2. Butter a 4×8 inch loaf pan or skip this step if you’re making muffins.
  3. Mash the bananas in a mixing bowl with a fork until they are smooth and stir in the melted butter.
  4. Mix in the baking soda and salt. Stir the sugar, egg, and vanilla extract. Mix in the flour.
  5. Add the chocolate chips and stir. If you want to add nuts add them in.
