Ingredients:

  • 4 large bell peppers
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup cooked rice or quinoa
  • 1 pound ground beef
  • 1 cup of tomato sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning or a mix of dried herbs
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Optional additions: mushrooms, corn, diced tomatoes, zucchini, or black beans

Instructions:

  1. Preheat your oven to 375°F. 
  2. Wash peppers, remove tops, seeds, and membranes. In a skillet, heat olive oil over medium heat. 
  3. Sauté onions and garlic until translucent. Add ground meat or substitute, cooking until browned. Include any optional vegetables, cooking until soft. 
  4. Mix in cooked rice or quinoa, tomato sauce, salt, pepper, and herbs until combined and heated. 
  5. Spoon the filling into each pepper and place them upright in a baking dish. 
  6. Cover with foil and bake for 30 minutes. Remove foil, top with cheese, and bake for another 10-15 minutes. 
  7. Let cool slightly before serving.

  • 8 ounces ramen noodles
  • 8 cups water
  • 2 cups spinach
  • 2 tablespoons soy sauce
  • salt
  • scallions
  • 1/2 cup white miso paste
  • 14 ounces tofu
  • 5 grams dried seaweed

Instructions:

  1. Place a pot over a high heat. Pour water into the pot and then whisk in the miso paste and soy sauce. Chop up the spinach and the tofu as you wait for the water to boil.
  2. Once the pot of water is boiling, reduce the heat and add noodles, cooking for 3 minutes. Add the tofu and spinach and continue to cook for around another 30 seconds. Top with seaweed and scallions before serving.

There are all kinds of ways you can use ground beef to create the perfect meal, and making meatballs is one of the best. There’s nothing like a steaming pot of meatballs to round out a dinner, especially when you’ve got rice to complement them. But if making them seems daunting to you, check out this easy recipe that’ll be a guaranteed hit.

The Ground Beef

The first thing you need is your ground beef, and make sure that it’s defrosted and easy to work with. Toss it all into a mixing bowl, and then throw in a half cup of breadcrumbs and two eggs. Add a few seasonings in there as well if you’re feeling adventurous.

Once you’re done mixing it all up, roll the mixture into multiple balls. The size of the balls is up to you but bear in mind that they’ll shrink once they’re getting cooked.

The Sauce

Next, get a sauce boiling in a pot over the stove. We personally like to use a full bottle of barbeque sauce, a half bottle of sweet chili, and half a cup of water. Toss some diced onions and garlic in there as well. Finally, to give it that extra dose of sweetness, add in a half cup of brown sugar.

Combining It All

Once your sauce is bubbling, place the uncooked meatballs into the pot, one by one. Cover the pot and let it sit for around an hour while mixing it around occasionally. Your meatballs should be ready to go by the end of it!

Mac & Cheese

Place your macaroni in a large bowl and grate some cheese over it. Then, pour a generous amount of cooking liquid into the mix. Place some cling wrap over the bowl and poke holes in it before placing it in the microwave. Continue to microwave the bowl until the pasta is cooked.

Cauliflower Cheese

Cut one large cauliflower into bite-sized pieces. Place the pieces in a microwave-friendly bowl and add 150 grams of cheddar cheese. Drizzle it with some hot English mustard, whole milk, and thyme leaves before microwaving for eight minutes.

Scrambled Eggs

Crack two eggs and use a fork to mix them. Add two tablespoons of milk before sprinkling some salt over the mixture. Warm the eggs in the microwave for 30 seconds before removing them, beating them again, and warming them further. Once ready, put them on some toast.

Ingredients:

  • 8 ounces ramen noodles

  • 14 ounces tofu
  • 5 grams dried seaweed

Instructions:

  1. Place a pot over a high heat. Pour water into the pot and then whisk in the miso paste and soy sauce. Chop up the spinach and the tofu as you wait for the water to boil.
  2. Once the pot of water is boiling, reduce the heat and add noodles, cooking for 3 minutes. Add the tofu and spinach and continue to cook for around another 30 seconds. Top with seaweed and scallions before serving.

There are all kinds of ways you can use ground beef to create the perfect meal, and making meatballs is one of the best. There’s nothing like a steaming pot of meatballs to round out a dinner, especially when you’ve got rice to complement them. But if making them seems daunting to you, check out this easy recipe that’ll be a guaranteed hit.

The Ground Beef

The first thing you need is your ground beef, and make sure that it’s defrosted and easy to work with. Toss it all into a mixing bowl, and then throw in a half cup of breadcrumbs and two eggs. Add a few seasonings in there as well if you’re feeling adventurous.

Once you’re done mixing it all up, roll the mixture into multiple balls. The size of the balls is up to you but bear in mind that they’ll shrink once they’re getting cooked.

The Sauce

Next, get a sauce boiling in a pot over the stove. We personally like to use a full bottle of barbeque sauce, a half bottle of sweet chili, and half a cup of water. Toss some diced onions and garlic in there as well. Finally, to give it that extra dose of sweetness, add in a half cup of brown sugar.

Combining It All

Once your sauce is bubbling, place the uncooked meatballs into the pot, one by one. Cover the pot and let it sit for around an hour while mixing it around occasionally. Your meatballs should be ready to go by the end of it!

  • 1 pound elbow macaroni
  • 4 cups broccoli florets (fresh or frozen)

  • 2 1/2 cups milk
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
