Embark on a baking adventure and savor the fresh, chewy goodness of homemade bagels with this easy-to-follow recipe. You can add your favorite toppings and elevate your breakfast with the irresistible aroma and taste of freshly baked bagels. Here’s a recipe for how to make them.

Ingredients:

  • 4 cups of bread flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1 tablespoon active dry yeast
  • 1 1/2 cups of warm water (110°F/43°C)
  • 2 tablespoons vegetable oil
  • 2 quarts of water
  • 2 tablespoons sugar

Instructions:

  1. In a large mixing bowl, combine warm water and sugar. Stir until sugar is dissolved. Sprinkle the active dry yeast over the water and let it sit for 5-10 minutes until frothy. Add the flour and salt to the yeast mixture. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for at least an hour, or until it doubles in size.
  3. Preheat your oven to 425°F (220°C). Bring two quarts of water to a boil in a large pot and add two tablespoons of sugar. Punch down the risen dough and divide it into equal portions. Roll each portion into a ball. Using your thumb, poke a hole through the center of each ball and stretch it to form a ring.
  4. Boil each bagel for 1-2 minutes on each side. Remove with a slotted spoon and place them on a parchment-lined baking sheet. Brush the boiled bagels with vegetable oil and sprinkle with your choice of toppings, such as sesame or poppy seeds.
  5. Bake in the preheated oven for 15-20 minutes, or until golden brown. Allow the bagels to cool on a wire rack before slicing and serving. Customize your bagels with your favorite spreads, or create a classic sandwich.

Egg fried rice is a great way to use up rice from the day before. Adding chicken and vegetables into the mix ensures you get lots of protein and vitamins and minerals. It’s also absolutely delicious! Here’s a recipe for how to make it.

Ingredients:

  • 2 cups of cooked jasmine rice (day-old)
  • 1 cup cooked chicken breast
  • 3 eggs
  • 1 cup of mixed vegetables (peas, carrots, corn)
  • 1/2 cup green onions
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt
  • Black pepper

Instructions:

  1. In a large wok or skillet, heat vegetable oil over medium-high heat. Add your diced chicken to the hot oil, cooking until a bit browned and fully cooked. Remove the chicken from the wok and set aside.
  2. In the same wok, pour beaten eggs into the remaining oil. Scramble the eggs until just set. Add the mixed vegetables to the eggs and stir-fry for 2-3 minutes until they are tender yet crisp.
  3. Push the vegetables and eggs to one side of the wok, creating a space for the rice. Add your pre-cooked rice to the wok, breaking up any clumps and allowing it to heat through. Once the rice is heated, combine it with the vegetables and eggs in the wok.
  4. Pour soy sauce, oyster sauce, and sesame oil over the rice mixture. Toss everything together until well combined. Add your chicken back into the wok, stirring to incorporate with the rice and vegetables.
  5. Add salt and black pepper to taste. Garnish with thinly sliced green onions.

Ingredients:

  • 2 pounds of lamb stew meat
  • 4 large potatoes
  • 2 onions
  • 2 carrots
  • 2 tablespoons of all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 cups of beef or lamb broth
  • 1 tablespoon Worcestershire sauce
  • 4 cloves of garlic
  • 1 teaspoon thyme leaves
  • Salt
  • Black pepper
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 325°F (163°C).
  2. In a large mixing bowl, toss the diced lamb with flour, salt, and black pepper until well coated. Heat vegetable oil in a large oven-safe casserole dish over medium-high heat. Brown the lamb pieces on all sides, working in batches if necessary. Remove the lamb and set it aside.
  3. In the same dish, add sliced onions and garlic. Sauté until softened and aromatic. Layer the browned lamb on top of the onions in the casserole dish. Arrange the sliced carrots over the lamb, followed by a layer of thinly sliced potatoes. Pour in the beef or lamb broth and Worcestershire sauce. Sprinkle thyme leaves over the top, and season with additional salt and black pepper.
  4. Cover the casserole dish with a lid or foil and place it in the preheated oven. Bake for 2 to 2.5 hours, or until the lamb is tender and the potatoes have formed a golden crust.
  5. Remove the Lancashire Hotpot from the oven, uncover, and broil for an additional 5-10 minutes to crisp up the potato topping. Garnish with freshly chopped parsley before serving.

When it comes to salad, Mediterranean flavors are always good to be brought into the mix. Greek ingredients such as feta and olives go particularly well, so here is a recipe for a Greek-inspired salad.

Ingredients:

  • 1 whole lettuce (little gem goes great as it’s quite bitter)
  • 1 cup of cherry tomatoes
  • 1 whole cucumber
  • 1 red onion
  • 1 cup of pitted Kalamata olives
  • 4 ounces of feta cheese
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of balsamic vinegar
  • 1 teaspoon of French mustard
  • Salt
  • Black pepper

Instructions:

  1. In a large bowl, combine your shredded lettuce with your sliced tomatoes, small chunks of cucumber, finely chopped red onion, Kalamata olives, and feta cheese that you can crumble throughout the salad.
  2. In a separate bowl, mix your olive oil with your vinegar and mustard. Whisk together to form a dressing, and add a bit of salt and black pepper.
  3. Pour your dressing over your salad and stir to get an even coating. You can enjoy this salad by itself or it will be delicious with grilled chicken skewers or a roasted vegetables and cous cous dish. Add ingredients such as pine nuts or walnuts for extra protein to embellish your salad.
