Ingredients:

  • 20 oz of lean pork belly
  • 5 cups of water
  • 4 slices of ginger
  • 1 green onion
  • 2 crushed cloves of garlic
  • 2 tablespoons of oil
  • 2 tablespoons of brown sugar
  • 3 tablespoons of light and dark soy sauce each
  • 3 tablespoons of rice wine

Instructions:

  1. Boil 4 cups of water while you cut the pork belly into cubes. Also, cut the green onion into 2 or 3 pieces.
  2. Toss the green onion, pork, ginger, and garlic into the water, and boil for 4 minutes. Drain and dry the pork and toss out the other ingredients.
  3. Dry the pot, put it back on the heat over high, and pour in the oil.
  4. Once the oil is hot, put the pork in for a few minutes to brown. Turn the heat to low, add in the sugar, and melt it so it can coat the pork.
  5. Put the soy sauces and rice wine into the pot, stir it constantly for 5-7 minutes so the liquid reduces but it doesn’t burn.
  6. Add the last cup of water, stir, cover, and simmer for 45 minutes stirring every so often.
  7. Continue to cook until the sauce is thick and glossy, and then serve right away.
