Dark Chocolate and Raspberry

Ingredients (to make 12)

  • 1 cup of self-raising flour
  • 1 teaspoon of baking powder
  • 3/4 cup of caster sugar
  • 3/4 cup of unsalted butter
  • 2 eggs
  • 1/4 cup of dark chocolate chips
  • 1/4 cup of freeze-dried raspberries

Instructions

  1. Grease and line a cupcake tray with 12 cupcake cases. Preheat the oven to 350°F.
  2. In a large mixing bowl, cream together the butter and sugar.
  3. Sift in the flour and baking powder, fold into a batter.
  4. Crack in the eggs, whisk in well.
  5. Add the chocolate chips and raspberries, stir through.
  6. Pour the batter into the cupcake cases, place in the oven and bake for 15 minutes. Leave to cool on a wire rack.

Lemon and Poppyseed
