Three Side Plates That Go With Every Main

When you’re dishing up a feast, don’t neglect the side plates. Although the main dish will of course be the main event, the side dishes offer variety and ensure that no one leaves the table hungry. Here are three that will complement any main you’re serving.

Herby Potatoes

Ingredients (to serve 4):

  • 2 cups of baby potatoes
  • 2 tablespoons of olive oil
  • 4 cloves of garlic
  • Handful of fresh rosemary, sage, and thyme
  • 1/4 cup of butter

Instructions:

  1. In a saucepan, bring 3 cups of water to a boil. Add 1 tablespoon of salt and the potatoes, and boil for 10 minutes or until cooked through.
  2. Meanwhile, heat the butter in a pan and cook the sliced cloves of garlic in the butter (don’t let the garlic burn).
  3. Slice the herbs and cook them in the olive oil. Once the herbs have infused the oil, strain it.
  4. Pour the butter and olive oil over the potatoes, season with salt and pepper, and serve immediately.

Cheese Polenta

Ingredients (to serve 4):

  • 1 cup of polenta
  • 1 cup of grated cheese
  • 1/4 cup of butter
  • 1/2 cup of milk
  • 1/2 cup of water

Instructions:

  1. In a large saucepan, cook the polenta in the water and milk for 10 minutes, until it has absorbed most of the liquid.
  2. Add the cheese and butter, and stir through until both are melted.
  3. Season well with pepper, and serve.

Dressed Mixed Beans

Ingredients (to serve 4):

  • 2 cups mixed beans (e.g. green and edamame)
  • 1/4 cup of butter
  • 2 tsp soy sauce
  • 1 tsp honey

Instructions:

  1. Bring the beans to a boil, and cook for 5 minutes.
  2. Drain and dress with the butter, soy sauce, and honey.
  3. Stir through well, and serve immediately.
